An Upscale Egg McMuffin And Spicy Mac N Cheese

I had some big croissants, left from another project and thought they would work out well for an egg, ham, and cheese sandwich. I scrambled the eggs, used sliced Black Forest ham, and a good Colby cheese...they were tasty and big enough to call supper! I never was much on croissants, but I am changing my mind about that now!
I also made some spicy mac-n-cheese yesterday, chopping some onion and Jalapeno peppers, then adding to the cheese sauce. I baked it for a bit , with extra cheese on top, and sprinkled heavily with black pepper. It had a zip to it, but was still pretty good! Today, I'm making my loaded bean dip....ground beef, refried beans, cut up peppers, onions, tomatoes, hot sauce and shredded cheese. It is so loaded with goodies, it's a meal in itself!
I also made some treats for the new neighbors that moved in Friday- good way to get off on the right foot with them!

Your new neighbours are lucky - I wish I lived near you! LOL

Ake- They were peanut butter Rice Krispie squares, frosted with chocolate. Their 4 year old girl ate two like right now!

Ahhhh! Bean dip! Come to mama.

buffalodick said...

Kate- This stuff is so loaded and thick, you could walk across the bowl on it...

...i want more than to be your neighbor...i'll just pitch me a little tent in the back yard so you don't have to walk far to bring me the leftovers!!

I think croissants are delicious. We just had left over cajun meatloaf sandwiches on a croissant. The spicey meat sure tasted good against that buttery sweet roll! Your mac and cheese sounds really really good. Thank to you I'll be craving that until I get some! ;-)

Lea Ann- Croissants are much better than I remember! Made for some good sandwiches...

I had cheesy scrambled eggs and wheat toast for breakfast...they didn't look near as good as your rendition.

Bring on the bean dip and a big old spoon...please. No need for chips...just the spoon and bowl.

Mac/cheese...anytime, any place.

I wonder what I should make now that I'm hungry again. (S)

there I was typing a message about your new neighbors and now I read that you have brought them some treats - now you'll really be on their good side. Someday I need to move in next door so I can benefit from your culinary expertise and nice personality!! Does your wife eat the mac and cheese with the Jalapenos??

Chris said...

Ack, great. I am just about to eat dinner and one of the dishes is mac and cheese. non spicy mac and cheese. Sigh, I'm depressed now, lol.

I wish my wife and kids liked spicy!

Loaded bean dip shared with the neighbors huh?

Them that fart together and laugh - live together happily...

buffalodick said...

Momster- I'm not cheap, but can be bought!
carma- Took years but she loves hot, spicy food now!
Chris- I started my family on it young! My sister calls me Dr. Pepper!
Intense- The new neighbors got sweet treats, I'll give them the hot stuff when I know them better!

There are 9 houses on my street, including mine. One was built since we were here (22 years), one's been sold once and two have been sold twice. I don't have to make nice noises for many neighbors. If Thor was on the Welcome Wagon, I think no one would ever move here, just looking at him!

The Good Cook said...

Aren't you the sweetheart neighbor to be taking edible goodies to the newly moved?

I didn't think anyone did that anymore, except me and you!

So you are getting to like croissants? You are finally coming over the the dark side.
They make a deadly bread pudding.

Your inventive egg mcmuffin sounds scrumptious.

buffalodick said...

barb- Yep! The lightness of the texture is perfect for some sandwiches..

pinknest said...

I once had an upscale egg mcmuffin. It cost me $22.

I've never had anyone bring me food when I moved into a new home. I thought that was something they only did on TV.

Jen- We have a block party once a year, and we've never gone!
John- Seemed like the thing to do...
Stacy- A little kick to a bland food can't hurt!
