When Nothing Sounds Good..Fix Some Eggs!
We have had a goofy schedule lately...nothing requires less planning than eggs for a meal! I made a rather homely cheese omelet, but tasted great! Today, I found out my wife was working 2nd shift on a Saturday, so I fixed myself something she would never eat- sunny side up eggs! Eggs are cheap, tasty, and are a healthy form of protein. Studies have proven they aren't the heart attack bomb everyone thought they were 10years ago... They are versatile, and can be used in cooking, baking, or stand alone for a meal! Looks like a brunch tomorrow, and I'm sure eggs will be somewhere in or on the menu!
P.S.- Can anyone tell I like Black pepper?

I so agree Buff, eggs are good. I have them at least twice each week and I can find a zillion ways to use them and even though they have at least double in price over the last few months they are still a good deal especially when one considers the protein value of an egg.

I see you eat the sunnys on top of your toast. My mom always made poached eggs and ate them that way and of course the kids thought it was way cool when I'd cut a whole in the center of a piece of bread and fry the egg and bread together. They called them egg baskets. Sunny eggs were called (and still are) dunkin' eggs since they dunked their toast in the yolks.

I love pepper! I am like the person who sits, and before they even taste the food grabs the salt- I am looking for the pepper shaker and hot sauce!
Sounds great to me- hubby has to go away for a few days- yeah I had him picked up, lol, so I am making these for a few lunches! He is the one with high cholesterol!
oh yeah, i'm with you on the pepper! i've never been much on eggs but there are times when a fried egg sandwich with plenty of pepper is the only thing that will hit the spot!

I think one of the first posts on my cooking blog was a fried egg sandwich. YUMMMMM! I'm still no good at sunny side up, though. I haven't mastered the "Add a little water and put on a lid" thing.
Pam- Eggs are kind of bland, and black pepper is just enough heat.. I also add Tabasco sauce most of the time..

I like a good amount of black pepper, too. Good use of those eggs.
I love loading pepper on things too. I use it rather than salt and it's a great substitute for flavor, I think.
Over easy, sunny side up, scrambled, benedicted, basted, omeletted, poached, hard boiled, 3 minute, quiched, fritated, Ya gotta love em....

The black pepper I could do, but I'm over easy to medium egg kind of guy.
I am going to take your advice and fix some eggs when I don't have much of an appetite. It's been happening more often lately since it's so hot around here... :)
Eggs are totally healthy just like Butter. (Most of the Stuff God made is- (Or your Deity of Choice).
Margarine is one chemical ring away from PLASTIC! True stuff! It'll kill ya!

BlueV- I use salt, but not as much as I used to!
G-man- And hard boiled, and Deviled!

When I was a kid and we had little money our big meal was fried eggs over white rice. (There was always money for white rice!!!) lol

The ongoing standoff in our family is the boys like more salt than I do but I like more pepper than they do. I'm the cook, guess who wins out :)

Well, you know how I feel about eggs! LOVE "EM! I've been interviewed a few times in the past few weeks and they keep asking me my fave comfort food: eggs and potatoes!

Really? Turkey eggs? They were selling giant goose eggs at the Farmer's market but I was not game to try at the time!
Aww, this made me a slightly sad in a good way though. My dad wasn't much for cooking when we were kids. He always made us this late night snack of fried eggs with a TON of pepper. I remember the taste like it was yesterday. Are you very against egg beaters or a combo of whites mixed with less yokes (like 1 whole egg+1 white?) ... my nutritionist told me that I should limit myself to 3 eggs per week because I have high cholesterol in my family :( They are all on meds in their 60s. I could live on eggs, but she says to watch it.

I love my black pepper grinder, too. And I agree that eggs are a great source of protein . . . and they taste great to boot. :)
