Bean Dip Deluxe- A Meal By Itself!
A while back, I mentioned I enjoyed hot snacks, and the one I listed was bean dip. My version is loaded with goodies to a point of being enough to eat for a meal- just add tortilla chips! My recipe goes pretty much like this:
1 can refried beans
1/2 of same can water
4-5 oz of chunky salsa (medium heat)
1/2 chopped onion
1 chopped red bell pepper
1/2 lb. of browned ground beef
1 fresh tomato, chopped
2 oz of liquid taco sauce
6-8 oz of shredded Monterrey Jack cheese
cumin and chili powder to taste
Simmer all ingredients until smooth and hot. Use as dip with Tortilla chips.
It goes quickly, and if some is left over, can be reheated easily.

Hot snacks or finger foods are my favs too. You really took the bean dip to a whole new level. there would be no leftovers at our house.
I love "snacks" even more so than a meal.. this bean dip sounds delicious and I would eat it like a meal!
My guys would love this with the game on the weekends! Nice idea.

Vick- Made for that purpose! In a crock pot, they can munch all game long!

I usually substitute Bob Evans Hot sausage instead of ground beef.
But I understand how delicate the senior stomach can be Buff...:-)
That looks yummy... add it to some crackers or stale french bread and I'm good to go..

Speaking of fritos is there anything less appetizing then when you first open a can of their bean dip?

Sounds tasty! Your post brought to mind another version I haven't made in far too long. Slip Mexican chorizo out of its casing and cook with onion, then add refried pinto beans. Simple and hearty. Gonna have to make it again sometime soon.
Like I've said before...give me the bowl and a spoon. (smiley)

I grew up on that canned bean dip, because my dad loved it, but I am not sure why they never made their own, goodness knows we had beans often enough during the week! I just had my first black bean dip on Sunday, it had been a long while, and I can see your enthusiasm for loving it! was good!

ChefE- Black beans are good, but come across a little gritty sometimes- they need meat in the dip! I refried my own beans once, and it was more work that it was worth- but they were good!

sheri- It was Christmas day, about 1960, the adults wanted to get rid of us kids for a few hours, so they could have a few drinks... Dropped us off at a movie-"Babes In Toyland"(sounds like porno!) My one cousin brought a can of Playdoh, and we all sat in the balcony and threw wads of it at the screen- which it stuck to.. ushers were looking high and low to see who was doing it, but never caught us!
