Tuna Salad In Cantaloupe- It's Summer!


I have made this dish and featured it before, but there are some new people that visit since I posted this last. Chicken salad and shrimp salad works well like this also!
My tuna fish salad recipe is simple and straightforward:
1. High quality tuna, either fresh cooked or canned Albacore in water, 12-16 oz.
2. Two hard cooked eggs, peeled and cooled
3. 2 stalks of celery
4. 1 medium onion
Chop all above ingredients into bite sized pieces
5. Add real Mayo (Miracle Whip and low fat mayo both have too much water in them!) to taste.
6. Add mustard, lemon pepper, and dried dill- all to taste.
Mix all above until blended thoroughly.
Cut a medium sized ripe cantaloupe in half, cleaned of all seeds. Fill cavity with tuna salad, and enjoy!
This is a good summer meal, eaten cold. It is filling and refreshing..
My melon could have been riper, but it was still OK..the salad was great!
Last night our area got clobbered with high winds, thunderstorms, and a lot of rain..Tornado warning were out, and the sirens were going for an hour!
Hard to get any sleep with a dog going crazy, and sirens blaring!

i remember this from last time...but a good reminder...thinking we might try this with the shrimp salad. despite me best intentions we dont always get to try your ideas, but this one we did and it was great.

I can't wait until the melons are ripe in this neck of the woods. Then, one a day is my motto!

Stay away from those tornedos! I remember one summer while visiting my in-laws, every night, around midnight those sirens would go off.. being a Nor'easter girl, I herded my children down into the basement EVERY time... the rest of the family thought I was nuts!

We had wicked storms on Sunday night and they're forecasting them for tonight, too. Weird and wild weather so far this spring. Guess it's on par with the wicked winter we had. I STILL think about those dark days of February and shiver a little in my soul.

I was excited at the idea of tuna salad in cantaloupe. I'm even more intrigued that you put egg in your salad. Sounds great! I'm totally going to do this!

I have had vanilla ice cream and cottage cheese (not together) in a cantaloupe but never any kind of meat - hmmmmmm, sounds different.

Love the addition of dill to tuna salad . . . I'm going to try this. The weather has just been hella-nasty for some lately. Ours is just rainy and chilly for the past few days. Quack, quack.

Vick- Dill weed is integral to the salmon, tuna, and most fish I broil! With butter and lemon, it is simple and has a great flavor... A restaurant here used to to this, and I learned from them, the taste was perfect with broiled fish!

Very yummy! I like the chicken salad with the melon too. But with leftover tuna, that would rock!

When is tornado season ending? I thought it was all over now?

I'll take my tuna salad on the side, and just eat the cantaloupe for dessert. I don't like to mix my food. Odd, I know. And, hey, your Airehead is smaller than Thor, so when she crawls under your feet, she doesn't knock you over!

Tis the season for weather! Same thing up here - flooding, unbelievable flooding. I just feel so lucky to not be flooded out. Looks great! I won't be finding any good tuna but will try it with your other suggestions. We have great chicken.

I had so many words spelt wrong in my first comment that I decided to delete it and try again. Too early morning for me, I guess.

That's one thing that is so wonderful about summer. Fresh fruit and produce tastes so good and makes for a quick, cool one dish meal. I could make a pot of corn on the cob or a pot of fresh beets with some butter (well these days it's margarine) and call it a meal. Or have tomato and sweet onion sandwiches. Your tuna/melon salad sounds delicious...I usually use shrimp, crab or chicken in my melon salads but I so love fresh tuna that I know I'd love your recipe. Thanks for sharing it.

And isn’t it grand not to have dishes to clean up either.

I too, use lots of dill and fresh lemon in many of my recipes and always with seafood or fish.

Storms and tornados are one of the things that I don’t enjoy about summer. Stay safe Buff. J-

What an interesting twist on sweet and salty! I've only ever seen this inside a tomato really. Clever!
