A Meatless Casserole- but not Cheeseless!


This is a casserole that has been around for more than 50 years..I just kind of updated it! It is a rice, broccoli, cheese concoction that I altered to make it a little more upscale. Normally, it is white rice, frozen broccoli,milk, and Velveeta cheese, baked until cheese melts. I used brown rice, cooked for 45 minutes in chicken broth, then mixed with American cheese, sour cream, a can of cream o mushroom soup, and steamed, chopped fresh broccoli. I then topped it with a layer of Cheddar cheese slices, and baked until top layer of cheese melted in a covered casserole dish that had been buttered before cooking. I sprinkled savory on the casserole before baking (350F for 40 min). Brown rice has a nutty, stand alone flavor and texture we really enjoy!
I have an older Catholic friend, who really didn't like taking the Lord's name in vain, so instead of yelling "Jesus Christ!" he would yell "Cheese and Rice"!
You can use this as a meatless main dish, or a side dish- you can also add chicken, ham, or turkey to the casserole for a one course meal...
Try it, you'll like it!

I can go without meat sometimes, but the cheese has got to stay. Looks tasty.

Kate- A spice, used before the Middle Ages... strong herby flavor, which works well with beans, and other veggies. I thought it would work well here, and it did!
Heff- When your meat starts smelling like cheese, it's time to hit the showers.. :)
Jeff- My love of cheese is well documented...

Gloria- Italian cheeses...I love Parmesan, Romano, Provolone, Mozzarella, Asiago, Gorgonzola, and ones I haven't even had yet!

Good Cook- Savory, the forgotten spice! I am a crazyman who loves spices like few people do.. It can be the key to a whole different flavor! My Mom used salt, pepper and cinnamon-period!

I adore that old recipe. Not made it in 20 years or more. I think the recipe I have has chicken, velveeta, instant rice and some sort of cream o soup. This version sounds great BD.

OK--sans meat I still give this 5 starts due to the stick to the ribness factor!

I would sooo go for this if I saw it laid out on a table!!!

With chicke broth, it ain't exactly vegetarian. But with better ingredents you use, it sounds pretty good.

sage- I'm no vegetarian, vegans wouldn't use this for the cheese and sour cream..

carma- 1 cup brown rice, 2 cups water or broth, teaspoon of butter, salt if you want, bring to boil, turn down and simmer in tightly closed pot for 45 min., (fluff at 20 min.) turn off heat, let set for 5 min.- perfect brown rice...

I have hunted duck, and deer- friends would give me goose breast to smoke for them! You have seen photos of the lodge I am part owner in...hardly roughing it anymore!

Casserole...the meals I love to throw together in one dish that can go from the oven to the table to the freezer.

My old boy would love this recipe of yours. He loves rice in casseroles and he loves cheese. I'd probably use a different veggie since cooked broccoli is not his favorite. I'd add some dry mustard, fresh dill (diced) and some sauted mushrooms and onions.

Hummmm...savory. I haven't used it in a long while. Seems to me I use to use it in a few chicken recipes. I'll have to give it a try again.

Mostly I am a pasta person but rice is a nice change. I've eaten many nice wild rice or brown rice dishes. I like to eat white rice plain with a touch of salt and a dab of my "Heart Smart" Promise margarine. My favorite way to eat white rice is as a cereal. Leftover rice with cinnamon, sugar and milk. Brings me back to my childhood days. I sometimes want it heated and sometimes cold.
