Chicken Paprika- Simplfied!

I have had chicken a lot of ways, but haven't had this dish in quite a while! When I say "simplified", I mean I cut corners in the traditional recipe and went with the basic flavors that give this dish it's taste. I took two large boneless, skinless chicken breasts, salted, peppered, and added onion powder, before dumping sour cream over them. I then sprinkled paprika (a fair amount!) on the sour cream, covered them in a casserole dish and baked them at 300F for quite a while! They came out very flavorful, but as this kind of chicken isn't prone to getting tender, they were still tender enough to eat and enjoy! With a side of left over broccoli casserole, it made a passable meal...
I'm struggling with new ideas as to what to eat lately- I think we all go through this occasionally!
Enjoy your week end, everyone!

You might have to "branch out" and go Thai or something...

A quick skim though your previous posts doesn't seem to have any Chinese food jumping out at me.

You're right we all get to a stage when we think "what the hell can I eat tonight?" Luckily it doesn't usually last long. :)

I.G.- I enjoy that cuisine, but it is often more work than buying take out!
Ake- I've been spending more time thinking about it than cooking!

It must have been "chicken night" last night, because that's what we had, too.

Sometimes I just want the food fairy to zap something into existence for me so I don't have to think about what to cook.

buffalodick said...

Marjie- It had a nice flavor, but I'm sick of chicken breasts!

Jeff- I lose momentum cooking sometimes...it is usually only for a few days...

You're looking to branch out? I've got a great orange/avocado recipe on my blog from about a month ago.... (ok I promise, that's the last time I'll poke you with my stick)

I have a hungarian recipe ( from my hungarian friend, Maria, who incidentaly is super good cook) which uses paprika and onion to make a lovely chicken dish.

yours's is great too

BTW if you are inclined towards chinese take out and yet not one for making it ( time et al), I have a post today that might make you think otherwise :)

Hi BD! I'm back from vacation with 100's of blogs to catch up on. This looks & sounds really delicious . . . I could eat roast chicken 3 nights a week and not get tired of it. :)

I'm feeling kind of burned out too. Luckily I still have a zillion foodie photos in my folder, so no one needs to know I had leftover pizza and ice cream for dinner tonight.

I have just the "cure" for you! Today is International Picnic Day and we're playing the Picnic Game over at my blog. I remembered that post you just did the other day so I know you can't pass up a good picnic. Perhaps, its the perfect tasty diversion. Drop by and pick a letter if you so choose. We played last year and it was FUN!!!

I'm sorry I can't get too excited about your chicken recipe. I admit it sure sounds simple though:) As I told you the other day, I've been playing with thighs these days. So much more flavorful. Whenever I get stuck, I page through old cookbooks and try to reconstruct the recipes. I've come up with some doozies!!!

Thanks for sharing. This too shall pass...

If that's what you describe as a passable meal I am very, very glad that I live far enough away to be happy in the knowledge that I'll never have to invite you for dinner!!

I think if I had made that 'passable' meal I would have told everyone about it for ever and a day... beans on toast would never taste the same again ;)

That's it?? Just those five ingredients?? I have these things in the house...so guess who's eating chicken tonight?

Let me know how long to leave it in the oven...and I'll let you know how the family likes it.

Thanks, Buff!

Well, the chicken looks good! I know, I get in the cooking doldrums from time to time. You feel like you are eating the same old thing all the time. I actually had a simple pasta last night. I can't remember the last time I made pasta! Odd because it is so common.

buffalodick said...

Fingers- I'm craving pasta, too!

Hello! I am UP with the culinary throwdown winner! I'm sorry I can't stick around to comment, have 18 year old niece in town and am still working! Thanks for playing! x

Buff-- the wife does this famously! Cuts the Breast into pretty "Fingers, and it not only makes a great presentation...but is awesomely Goot!

Also--If tired of it- ease some Cream'o Chicken/ or Mushroom over it and stretch, it further to keep any leftovers moist. Adjust cooking time for this batch.

I'm not a huge fan of chicken breasts...really prefer thighs and legs. And I have it several times a week too. Still, your recipe would work with any cut of chicken.

Hope something special is planned for your Father's Day!
Have a relaxing day. Let someone else do the cooking!

Diva- Hard to beat 9 dishes! Congrats to Eggplant!
John- Sour cream tenderizes to a degree- different flavor was tasty..
Barb- I don't mind cooking, but I'm hoping for seafood!

Try the same one with tandoori Chicken Masala. You will get one on an Indian store!

buffalodick said...

Mona- I will, just for you dear!
