Beef Enchilada Bake
I had everything in the house to make this dish, and I know from experience my wife loves the flavors of Tex-Mex food! I seasoned and browned 1lb. of ground beef, using more liquid than normal,, because I will drain the meat and have ready made enchilada sauce to pour on the enchiladas. I used small flour tortillas to wrap the meat, laying them seam side down in the oiled casserole dish- four fit perfectly! I poured the sauce over all, then topped with cheese. I also added some Jalapeno slices, which really kicked up the heat a bit! I baked them uncovered, until cheese was melted, and dinner was served..If it sounds simple- it is! All the classic flavors are there, and even had two left over...
Hopefully today I will pick up some fireworks for the 4th.. I always look forward to that!

I love enchiladas! Only I make mine much more complicated. Hahaha! Yours are simple and yummy.

mmm...T does a chicken enchilada like this...and sprinkles it with crushed doritos just to be bad..smiles.
I.G.- It was U.S. Steel or Bethlehem Steel that invented it. The lawsuits were huge! They field test in salt water for years now in a standardized test...

Donna made homemade chillitoes last night, and I sliced up 5 of her chilled tomatoes and covered the chillitoes with them. Good Stuff !
Do you make your own enchilada sauce, or do have a favorite brand?
I love the addition of jalapenos.
Heff- What is a chillitoes? I'm sure it was tasty, but have never heard the term...
Pam- You can make your own the way I described..if you want thicker, add tomato paste!
We set off fireworks on the 4th, too. It's fun at our friend's lake cottage, but great here, too. Thor stays inside and whimpers.
BlueV- These were pretty warm! We ended up with a good flavor, though..
Marjie- Our dog doesn't know what a pyro I am! We go to a lake, where friends host a party..I bring ribs!
mmm... anything with the word "bake" in it man!
Now you have me hungry for Tex-Mex.. we have a great little restaurant around here that serves the best enchiladas, burritos, tacos and really COLD Cerveza.. hmmm.. maybe dinner out tomorrow night?
Kris- bake is a good way to finish an already cooked meal!
Good Cook- I will usually order something I have a hard time making- rellenos!
I LOVE how simple and quick most of your dishes are! This is perfect! And I'd bet it reheats well - as if there are any leftovers!!!

John- People have gotten too caught up in the "sizzle and not the steak".. Great food is more dependent on a good cook, that separates the Bullsh*t from the buckwheat..
J.J.- Eat well, and simply..peasant food is great and done with less ingredients!

Fireworks stands are going up all over the place here. We really "do up" the 4th here with fireworks on the lake. Fun bid-ness!

Oh man, this looks incredible. I'm not one for heat, but hubs totally is. You guys eat such yummy stuff that's not really on my diet. I'd have to do this with 94% lean beef, fat free cheese, etc. so not fun!

sounds simple, but oh so good...I always order enchiladas when I go to a mexican place to eat...ALWAYS. they are my favorite. haven't made them in a long time either.....hmmmmm.....

Your simple enchilada bake sounds really good. I really like it because it would be perfect for a no-fuss meal during the week.
The 4th of July is just around the corner and the top of the closet is piled high with fireworks purchased in Tennessee last November. I have two sons and this is the highlight of the year-it definitely brings out the pyromania in them.

chilito is a small chile - so hef is kinda right - secondly its a taco bell food - now in my spanish speaking family "chilito" relates to anything with some chile on it - for example "huevos chilitos" or eggs with a little chile....
