What Did You Eat On Cinco de Mayo? Mini Meme Time!

I fixed a sort of a Tex- Mex dish- Nachos! With tortilla chips, cheese, onion, green bell pepper, and chunky salsa, it hit the spot! I was going to make burritos, but wife likes crunchy corn shells better than soft flour wraps.
The questions today are easy and fun.. join in and participate!
1. What is your favorite Mexican dish?
2. What is your favorite Italian dish?
3. What is your favorite Asian dish?
4. What is your favorite American dish?
I'll go first, to show the new kids what to do!
1. Tamales! Love to get them, but a good one is hard to find around here!
2. Manicotti. Stuffed with a meat and cheese filling, and covered in a good red sauce!
3. Korean beef short ribs. The flavor is out of this world!
4. Cheeseburgers. Made medium rare, with green olives, lettuce, and mayo- good stuff!
Try your hand at this, and have a good week-end!

Cinco snuck up on me, I almost made pasta. Can you imagine how angry the Cinco Gods would have been? It was easy Chicken Fajitas for us.
Mexican: Too many Rick Bayless favorites to list
Italian: Spaghetti with Italian Sausage and a good marinara
Asian: Curries
American: Cheeseburger, what else?

Snuck in via Marmies blog. You are some wonderful cook. I love that you share your reipes. I'll surely be back again and again.

1.) Chili (medium hot) tamales and pablo shrimp.

2.) Ah so many. Any pasta with seafood and of course the basic spaghetti with big soft tasty meatballs, chunky red sauce with a few red pepper flakes and a good parmasia cheese on top and a side of garlicy bread with a light white wine to sip. Don't forget the side of Italian dressed salad with salty green olives, tomatoes and red onion and spicy banana peppers. Oh yum.

3.) Sushi, bbq pork, lo mein and house soup. and about a zillion other things. I recently tried some lettuce wrap things with spicy beef and it was wonderful.

4.) Goulash Hotdish with thick slabs of white bread with real butter and milk. Or fried chicken with mashed potatoes, stuffing and white milk gravy...sides of cranberries and fried sweet corn. Apple raspberry crisp (hot) with vanilla ice cream on top. Fresh hot coffee...creamed twice.

The only Mexican food my husband will eat is Spanish Rice so I made my version with corned beef for Cinco De Mayo.

Other than my childhood faves of American food. I love anything with seafood, good fried fish, smoked or pickled fish, ribeye steak and primerib. BBq chicken and beef ribs are mighty tasty too.

Damn. Now I'm hungry and it's just hotdogs and mac/cheese for dinner tonight.
