Steak And Potato Soup
A couple of nights ago, we had steaks. My wife and I split one, so I had one left, and I knew exactly what to do with it! Steak and Potato Soup! My version goes like this:
1. One can of cream of mushroom soup
2. One can of water, same size
3. One NY strip steak, cooked, cut into chunks
4. One cup of chopped onion
5. Three small Yukon Gold potatoes, cubed
6. Two ears of fresh corn, stripped off cob
7. Black pepper to taste
8. A little brown gravy mix(shake with cold water before adding)
Simmer all above until potatoes are tender but still firm
Enjoy!
It was pretty tasty, for a quick, throw together soup..

I think I could actually cook that without too much of a problem and it sounds hearty and delicious!
Well, I would obviously just skip the steak...easy and quick are always good things in my book!

You really got the most out of that one can of soup, didn't you!? Great way to use up some leftovers but this is a first run dish, nothing leftover about it. Nice.
Shoot! I had a leftover steak on Tuesday that I put on a (boring) salad. This is more creative.
Simple and delicious still quite a luxurious meal in itself! Yum!

I made a concoction of fecatia bead and pizza this weekend. Not my best work, but still good.

sounds so good!! it's almost too hot for soup here in the bluegrass but as long as the air is cranked up, this would certainly be something i'd love to try!

It sounds pretty good, but I'm amused that you start wtih a can of soup, but instead of using canned/frozen corn, you go for the fresh stuff...
I love creative leftovers - only I call them Do-overs.
do you usually have a lot of ingredients on hand or do you run out to the store when you get inspired. I never seem to have what I need handy and am often too lazy to run out and get some.

Sounds really really good. I don't need 20 inches of snow on the ground to enjoy soup. It's a year round dish for us. And by the way, need I remind you that I grew up in the middle of sports crazed Kansas? 1st Base, slow and fast pitch from Grade School, High School, College, through women's leagues until I was late 30's? You could probably beat me at arm wrestling! :-)
LeaAnn- I'm left handed! Pitched baseball, played center field in softball into my mid 30's.. You could beat me right handed in arm wrestling!
Isn't NY Strip a little PRICEY to put in a soup ? Seems to me that Chuckeyes or another more affordable cut would do just as well for soup...
Save the NY Strips for the GRILL man,lol !!!

This would go over great at our house. We love soup year around and generally make them with whatever is on hand...left-overs and all. I can just see dunking that delicious looking bread into a hot bowl of your soup.

Barb- Michigan corn? Not for a couple more months..Yukons hold firm while in soup- "the go to" potato!
Ake- Better in colder weather, but it is gone...

Barb- Looked it up..Petoskey was indeed inhabited by summer people from Chicago..A beautiful little town I used to call on for a bit of steel business. The Lapham-Hickey Steel company had a place there, and worked with a son of the Hickey family for a bit!
This and the Truck Driver special steak look really good. I got to remember not to read your blog just before dinner time or risk eating my computer mouse...

that sounds scrummous, except, we have steak so rarely that I wouldnt be able to save any to make soup with lol

Love the ingredients in this soup. I've never been able to beat Campbell's cream of mushroom flavor. Yum!
