Mini- PIzzas And Asparagus Bundles


When our children were younger, like most kids they could be picky. Pizza was a problem! One wanted this on his, the other wanted that... The simple answer was to make them each the pizza they would enjoy... We found a half an English Muffin was a perfect crust for a kid sized pizza! Last night that is what my wife and I had for supper...English muffin crust, home made pizza sauce, grated Parmesan cheese, shredded Mozzarella cheese, with Pepperoni slices.
It went along with some steamed fresh asparagus with bacon- the real star of the show! I tied them in bundles of three with bacon, and cut the string when done broiling with the pizzas. Simple, yet good!
Tonight will be a chicken chef salad, and possibly peanut butter chocolate chip cookies..we'll see..

My kids loved English muffin pizzas! I make the "adult" version these days (bruschetta), but the ones on muffins were pretty tasty!

Sounds good, BD. I used to do that with something called Bobolini. (Do they even make that anymore?)
Had some asparagus last night with salmon...it was lovely. It's wonderful roasted.

mmmm! my grands love the english muffin pizzas for the same reason as your kids did.
i'm embarrassed to admit it but at 53 years old i have never had fresh asparagus! i've had my fair share of the canned variety...but i believe that your simple fixin's has made me curious, and maybe a little willing to try it out.

G-man- You're right, but asparagus is much easier and cheaper to get!
Griller- I overcooked the bacon a bit, so I couldn't wrap it as normal!
Sheri- Canned sucks- get fresh and you will never go back!

buffalo-- I finally tried ASS paragus for the 99th time- swearing to myself I still was not going to like it. It was the meal the night of our fishing trip--Just Dog's, Burger's on the grill and ASS paragus in tin-foil and Olive Oil on the grill.


I LOVED IT!

It's so important to keep on keepin' on trying stuff!

dude, i love english muffin pizzas...my mom used to get the stuff so we could make them as snacks in teh afternoons...

Hi unclebuff,

As a true veggie lover, I loved asparagus,even as a kid. I still love it. When I was little and lived with my grandparents, I didn't know the name of it, so I said I wanted S'more of it. I didn't know what s'mores really were until I was practically grown!! I always though s'mores meant asparagus.

Oh Buff, this so speaks to me. I bought french bread, peps, cheese and asparagus, so you have inspired me, I am making pizzas for our Saturday movie night tonight! Yum on this...

John- My first asparagus was my moms... cooked to mush...We found 5-6 minutes steamed was just about right..
R.L.M.- I just enough veggies to keep my conscience clear...
Brian- It was a remembered memory from our past..
snowniece- I was a while learning to like it..Now I love it!
Chef- So quick and easy...
Ake- You know how it was feeding kids sometimes..

Brings back memories. Me and my co-Den mother (Susan) used to have our Cub Scouts fix their own English muffin pizza's the last meeting of each month. We had a toaster oven, sliced English muffins and a bunch of different fixings out for them. They loved making their own pizzas. You should've seen some of the concoctions they came up with. I think it was their favorite meeting each month.

A couple of the scouts would squeeze lemons for lemonade or mix up kool-aid to go with their pizza party. We gave them dixie cup ice cream (with the small wooden sticks that came with them for spoons) and chocolate chip cookies for dessert. They had a ball and earned Merit Badges and me and my co-Den Mother had fun doing it with them.

Asparagus is one of my favorite foods in the world. Your recipe sounds terrific. I'll try it for sure. Thanks sir.

Chris- Key word: Time. It takes very little, and we all have nights like that!
J.J.- My wife was a Den mother- and I was sucked into the action a lot!

I've recently discovered I like asparagus. I think it's one of those things you have to grow into. Now I need to learn to cook it. Thanks for the tips.

Jen- easiest start to good asparagus is to steam it about five minutes and butter it with salt and pepper, cutting off the thick parts of stalk.. awful good!
