Boneless, Skinless Chicken Thighs, And Rice
This is a classic match! Simple, tasty, and easy... even without skin, thighs stay more moist than white meat. Seasoned, then baked while I made the rice, we had a nice meal in a short period of time!
I have plans for the leftover chicken and rice- either Mexican flavors, or Asian..I haven't decided which yet..
I'm still kind of sore from where I fell, so cooking has been a little slower than normal...
