Boneless, Skinless Chicken Thighs, And Rice
This is a classic match! Simple, tasty, and easy... even without skin, thighs stay more moist than white meat. Seasoned, then baked while I made the rice, we had a nice meal in a short period of time!
I have plans for the leftover chicken and rice- either Mexican flavors, or Asian..I haven't decided which yet..
I'm still kind of sore from where I fell, so cooking has been a little slower than normal...
I got my confirmation on the KCBS BB-Q entry.. got to start making sauces and rubs soon!

I've found the packaged mushroom rice is DELICIOUS. Just add water and microwave. I know packaged stuff is bad to you master chefs, but it's quick for those nights after work when you're trying to whip things up.

I have found that I should never LOOK at or READ your Blog before I have eaten...it simply makes me drool and even more hungry then I already am. Now that I know how to enlarge your photos I'm really screwed. Teeheehee
Need I even say the chicken and rice looks and sounds wonderful? And the fact that it is a quick and easy fix makes it even more tempting. Ahh...YUM-yum!
Take it easy on the leg. You want to be at your best for the contest. I can hardly wait to hear about it.

I only use boneless, skinless thighs. My nurse daughter bitches like it's the end of the world about "blub" and I tell her to shut up. You and I were on the same dinner menu last night!

Chicken thighs are better than the breast. I'm just disappointed that the stores have figured us out and started charging more for them. They used to be dirt cheap around here.
I'm with Chris - makes me mad when they raise the price on meat like thighs and wings because they're popular.
