It's Soup! The Easiest Use Of Left Overs....


I eat soup year round! A few nights back, I had left over chicken and rice...Plenty can be done with these ingredients! I chose to make tomato based soup, utilizing chicken and rice into a hearty soup, even though the temperature outside was a bit high. Tomato sauce, Italian spices, some milk, some cheese, and the base was simmered until blended. Adding already cooked ingredients made this a quick, tasty meal! I floated a tomato slice, with croutons and Parmesan cheese on top of soup....quite tomatoey, it was rich! Some like that, and some don't, but I don't make soup from a recipe- and neither do you!

Now that is one substantial soup! We don't have air conditioning up here, so soups are out for July & August unless we have a cool spell. But this sounds delicious, BD. Hope you're having a great summer!

The one soup that I can eat all year long is split pea soup. I love it!

We eat soup all year aroud too! dear, is fantastic, because I make a soup and with some toasts and salads the kids are happy!
I love specially veggies soups, peas and tomatoes and pumpkin! huggs gloria

I am loving this! My husband only likes to eat soup in the Winter bah-humbug, I love it year round. A perfect way to use leftovers.

Your soups are always such wholesome meals in themselves. In India, Soups mean just appetizers.

vick- We have aircon, but not a soup that can't be made in a slow cooker, that doesn't heat the house up!
otin- As a Dike Jumper(Dutch) split pea is common here!
Gloria- I never met a soup I didn't like!
Velva-Soup is too easy to ignore most of the year!
Brian- the tomato slice was a nice touch, went overboard on croutons!
Mona- I like them either way!
DogB- I like tomato soups, but this was a bit too rich..
I.G.- Still needed a spoon, but it was thick!
Darngirl- It was a good blend..

ooh, looks yummy! i say as long as the air is on in the house then soup is perfect! you have quite an imagination when it comes to the blend of ingredients that you used and i'll be right over to try it ;)

Soup is a great way to use up leftovers....but with this perpetual East Coast heat wave, the only soup I will eat now is chilled soup. Guess I should make some gazpacho?

I like soup all the time, too. One of my grandmothers used to swear you needed to eat and drink hot things in summer to "make your innards match your outards." I never heard of an outard, but the philosophy is reasonable.

UrbanV- My house has aircon, so heat isn't too much of an issue..
BlueV- Seemed like a good dish with the leftovers!
Marjie- I've heard something similar about coffee..

I'm completely with you on soup year-round, without recipes, but with leftovers. This one sounds mighty tasty and hearty!

Another great job Buff. We love soup here too. Any time of the year. One of the best comfort food that I know of. Right up there with macaroni and cheese. It's chicken here again today.

MMMM.. I love soup but it is just too darn hot here for anything that requires indoor cooking. Just got back from a 3 mile walk with the dog and I don't know who is panting more - me or her!

I really love soups, but rarely make them any more. I alternated making my dad a barley or pea soup...he loved it every day for lunch. And only those two. So maybe it's because I had to make soup for so many years.

My sister, the one in Spring Lake, is one of the greatest soup-makers I know. When I visit her I know I am going to have some great homemade soup every day. (is this a Michigan thing??)
It's just too hot for me to even consider it this summer!

I am making 'odds and ends' soup tomorrow, may slip some country ham into it I need to use in the freezer, potatoes, onion, leeks, and a few other veggies I have to use up- hope hubby eats it with a smile!

Yours sounds great, I like tomatoes!
