Two Meals From Leftover Roast Chicken..



Monday night, I was feeling nostalgic for a chicken treat I would occasionally get when I was a kid.. My folks were quite involved with their church, with their social life revolving around it, and most of their friends were fellow members. About once a month, four couples would have coffee and food after Sunday evening services, each taking turns hosting it...this meant about four times a year, it was at our house! My mom would sometimes make a chicken and cheese snack in the form of a creamy cheese based spread, filled with bits of cooked chicken on hamburger buns. They were baked in the oven until cheese was warm and melted, and the buns were getting crunchy-toasty! I loved these stupid simple treats, and made them for the first time in 40 years on Monday night.. They freeze well, and are easy to thaw and eat for a quick snack. I had some cooked bacon I added, just because I could!
Tuesday night, I made Chicken Nachos Supreme, with two kinds of shredded cheese, chopped onions, chopped fresh tomatoes, on good crisp tortilla chips. Hot sauce, or salsa was optional.. I didn't reinvent the wheel here, but it was a tasty way to finish up the leftover chicken!
My tummy had been touchy for the last month, and hadn't been wearing the jeans I got for Christmas for weeks..imagine my surprise when they wouldn't even stay on me without tightening my belt! I must have lost 20lbs.! Believe me, I could lose 20 more without fear of looking thin!

Wow. 20 pounds in a month is a lot! Are you feeling better? A bad tummy is not a good way to lose weight!
Must be really hard to cook and blog about food when your tummy is not behaving properly! It sure is when I'm dieting!
Those old recipes are always the best; your mom's cheesy chicken appetizer sounds great!

20lbs in a month is a lot to lose Buff, especially if you're not trying. I think you should see a doc too m'deario.

Now hubby would go for chicken nachos, never gave them a thought before- for some reason I never cared for left over chicken??? But smothered in cheese and salsa I can see that plate of goodness there!

I lost a good 15 pounds between Halloween and New Years, due to my infirmity. I'm happy to say I haven't put it back on, although my dearly beloved keeps telling me I'm scrawny.

I'm going to try your chicken sandwich idea. I always want something easy to cook on weekends!

Marjie- Imagine a thick cheese sauce, like Velveta, Worschester sauce, mustard, mixed with chicken(or tuna, or any other meat!) on toasted buns- I know you will figure the the best for your family and their taste buds!

Jen- Do not worry! I have insurance issues(COBRA ending!) that must be resolved first.. and I am in the midst of this as we speak!

Pam- You ladies and your concerns touch me, but if you were a guy, you would let it go... I regret bringing this up... I can, and have lost and gained 50+lbs. about three times in my life... I am not a man of moderation!

bacon always adds that extra touch...sounds yummy. so how do you eat these wonderful things and lose 20 pounds....i need to be on your diet...smiles.

20 pounds is alot of pounds. Just picture 20 pounds of hamburger! :-) Your mom's sandwich brought back memories of the same. Church folks and hosting at our house meant ham salad sandwiches on white bread. Simple and so good.

I have a recipe I MUST find now called KING RANCH Casserole..made by an Old Delta Stewardess- LOL_ from Texas--back in the 70's!

It would sell! But yours, sounds just as good and a heck of a lot less trouble!

You read my mind. I'm making deluxe nachos with left over bbq chix thighs for the games tonight.

We used to host these occasional church group meetings too. I always loved the coffee cake.
