Two Meals From Leftover Roast Chicken..
Monday night, I was feeling nostalgic for a chicken treat I would occasionally get when I was a kid.. My folks were quite involved with their church, with their social life revolving around it, and most of their friends were fellow members. About once a month, four couples would have coffee and food after Sunday evening services, each taking turns hosting it...this meant about four times a year, it was at our house! My mom would sometimes make a chicken and cheese snack in the form of a creamy cheese based spread, filled with bits of cooked chicken on hamburger buns. They were baked in the oven until cheese was warm and melted, and the buns were getting crunchy-toasty! I loved these stupid simple treats, and made them for the first time in 40 years on Monday night.. They freeze well, and are easy to thaw and eat for a quick snack. I had some cooked bacon I added, just because I could!
Tuesday night, I made Chicken Nachos Supreme, with two kinds of shredded cheese, chopped onions, chopped fresh tomatoes, on good crisp tortilla chips. Hot sauce, or salsa was optional.. I didn't reinvent the wheel here, but it was a tasty way to finish up the leftover chicken!
My tummy had been touchy for the last month, and hadn't been wearing the jeans I got for Christmas for weeks..imagine my surprise when they wouldn't even stay on me without tightening my belt! I must have lost 20lbs.! Believe me, I could lose 20 more without fear of looking thin!

That sounds good and easy too...whats your secret about the 20 lbs.....??
Anxious to see what you can do with Lobster also, Boss.
nice job on the baggy jeans!
Wow. 20 pounds in a month is a lot! Are you feeling better? A bad tummy is not a good way to lose weight!
Must be really hard to cook and blog about food when your tummy is not behaving properly! It sure is when I'm dieting!
Those old recipes are always the best; your mom's cheesy chicken appetizer sounds great!
Robin- One meal a day, and you've heard of "irritated bowel"? Mine has been down right pissed off!
Heff- Already have my plan!
DogB- I look like Charlie Chaplins "Little Tramp" in them now!
Barb- It's more the memory than the taste, sometimes..
We made those sandwiches with tuna. Yum.
A month of tummy troubles? Seems like a visit to the doctor is called for... what do you think?
Kate- That would work, too!
GoodCook- I hate doctors, I'm never good enough for them!
20lbs in a month is a lot to lose Buff, especially if you're not trying. I think you should see a doc too m'deario.
The chicken snacks sound yummy. :)
OOOHH! Chicken nachos sound so yummy!
Ake- No worries, plenty of fat reserves!
Christie- They are light and tasty- and gone!
Now hubby would go for chicken nachos, never gave them a thought before- for some reason I never cared for left over chicken??? But smothered in cheese and salsa I can see that plate of goodness there!
ChefE- Simple and easy...chicken is so versatile ...
I lost a good 15 pounds between Halloween and New Years, due to my infirmity. I'm happy to say I haven't put it back on, although my dearly beloved keeps telling me I'm scrawny.
I'm going to try your chicken sandwich idea. I always want something easy to cook on weekends!
I'm going to side with the guys wanting you to go to a doctor. Losing weight without trying is not good...
Marjie- Imagine a thick cheese sauce, like Velveta, Worschester sauce, mustard, mixed with chicken(or tuna, or any other meat!) on toasted buns- I know you will figure the the best for your family and their taste buds!
Jen- Do not worry! I have insurance issues(COBRA ending!) that must be resolved first.. and I am in the midst of this as we speak!
I agree with everyone else, as soon as you get your insurance issues settled, you need to go to the doctor!
Pam- You ladies and your concerns touch me, but if you were a guy, you would let it go... I regret bringing this up... I can, and have lost and gained 50+lbs. about three times in my life... I am not a man of moderation!
OMG this look really, really good.
20 pounds?? Buffalo you are OK??? I hate doctors, really, have a nice Easter, huggs, gloria
What are you made Im curious!! je,je, huggss
Gloria- You live until you do not... I almost died once, and I have no fear of much...my first concern will always be others, as I have no wants..
bacon always adds that extra touch...sounds yummy. so how do you eat these wonderful things and lose 20 pounds....i need to be on your diet...smiles.
Some of the best food are the ones that bring back fond memories. I would love these cheesy chicken sandwiches.

20 pounds is alot of pounds. Just picture 20 pounds of hamburger! :-) Your mom's sandwich brought back memories of the same. Church folks and hosting at our house meant ham salad sandwiches on white bread. Simple and so good.
Oh my Gosh, as saliva forms--The Pavlov response- what a cool post to evoke that- I'm serious!
I have a recipe I MUST find now called KING RANCH Casserole..made by an Old Delta Stewardess- LOL_ from Texas--back in the 70's!
It would sell! But yours, sounds just as good and a heck of a lot less trouble!
