Pie And a Pasta Dish- The Meal Of Choice After A Cook-off..



Sunday, we were kind of whipped from Saturday-a long day in the rain.. My wife is working insane hours, so I thought I should do something special for Sunday dinner- even though I was wupped too..
I baked an apple pie. Now, to all you excellent bakers who stop by here, you know I can bake certain things quite well- but a crusted pie isn't one of them! Crusts intimidate me, but I did it anyway! The filling was fresh apples, in a sugar-cinnamon sauce- simmered until tender and thick. The crust was simpler than I thought, and by the photo you can tell it came out beautifully.
The pasta was small shells, covered in a long simmered red sauce, with added basil, oregano, red pepper flakes, fennel seeds. Browned, seasoned Italian sausage and ground beef, and a sprinkling of Parmesan cheese made it simple, filling, and quick to prepare!
Tonight, it's spare ribs in the oven, with a carrot cake for dessert..time to get the ribs in!

I love that pie, it reminded me of a wagon wheels, wonder if that means you are a pioneer in BBQ? :)

Some who are good at cooking, are not as skilled at some baking things like pie crust, unless it something you do on a regular basis- I know I am one of those- Only did well in my early years with crust when my mom and grandmother were alive to help me, that is why mine does not look so great in photos, but I try.

Dough in general intimidates me. So far I've only been brave enough to try quickbreads...no crust, and no breads that have to be left to rise.

A red sauce for pasta never comes out of my kitchen without fennel seeds. Great job on the pie.

ChefE- I don't like a full pastry top pie crust, so I tried this design..ate pretty good!
Brian- Italian sausage is a favorite of mine..
Jen- I can do yeast breads, and yeast pizza crusts, but pie crust is a different animal!
Uber- That's how a guy makes a pie!
Ake- I've done shortbread, which is pretty easy...
highlander- I like fennel in a sweeter red sauce- good depth of flavor added..

Use my pie crust that's made in the pan and pressed in place. No rolling needed. Perfect for us pie crust-phobic folk. And I always make a "Dutch Apple Pie" with the crumb topping, so I don't have to fuss with the top crust!

(If you want the directions for the no-roll crust, let me know, and I'll email them off.)

Marjie- Dutch apple pie is cooked in a brown paper bag! Their favorite apple is a "Wolf River", a heritage apple which is tart and huge! Some weigh in at a pound! My Great Aunt Jen was a favorite of mine- best Dutch baker I ever knew! I've seen your baking, and you are 4 stars+!!

Man that';s some good stuff! I would never take on a oie. Grat info on the type of Apple though...there are soooo many!!!

I never make my crust. I use the frozen kind and that's ok with me.

I always have real lard on hand when I want a SUPER flaky crust!!
But crusts are not my specialty..
I do love oven baked ribs....
