The Blog Of B's Today, Bacon, Bueno Nachos, Beef Barley Soup, And Beeuteefull Browines!






Earlier, I posted on visiting a friend in poor health. I brought cheesecake, with a raspberry sauce, and in return gave me some bacon he found at an out of the way meat market... By looking at it, I knew this stuff was primo! Center cut, thick, smoked, and fat-to-meat ratio near perfect, we waited one day before diving into it! My wife loves a BLT, but doesn't like tomatoes on it... This is a friggin' bacon sammich with mayo and lettuce! Next night, we had "breakfast for supper" which we do occasionally- bacon again, an omlette with mushrooms and cheese in it, with a toasted bagel. She ate her bacon, and the two extra pieces I had made for the dog... Moral of story- Get not between my wife and excellent bacon! Also, I recommend saving the bacon grease after it cools- much added flavor to many dishes you might make! Refrigerate- of course!
Following night, we simply had some Nachos- as my wife's work schedule got changed again!
Today, I made a soup we enjoy, which is simple, homey, and good- Beef Barley! I use a slow cooker(crock-pot!) in the summer months for soup... long cooking times, limited heating up of the kitchen, and low energy use all good reasons to do this. I use reduced sodium beef broth, beef bullion cubes, water, garlic, black pepper, Worcestershire sauce, barley, small cubes of beef(eye of round, this time!Brown it first!), chopped onions, celery, carrots, and sliced fresh mushrooms. Cooked on low for 6-7 hrs., it is simple and delicious!
I also made some out of the box Turtle brownies(with addition of more choco chips!) that we don't need, but will probably eat in two days flat!
I still have to slice the rest of the eye of round into jerky strips, marinate, and dehydrate over the next couple of days, and I also have to make tuna salad for sandwiches, and filling for melon...

I have your roast in the oven right now! I took a pic of the before. I also tossed some onions and shredded carrots in with it. I used the celery soup and gravy packet.

I will take a pic of the after and post on it tomorrow. I am hoping it is yummier than bob evans.

Your soup sounds great. I will give it a try too.

Bina- Tortilla chips, chopped onion, tomato, green bell pepper, shredded co-jack cheese, nuked for 2 minutes- and you're eating! Love those first two hot sauces, wife like Chi-Chi's..
DogB- Was as good as it looked! Poor animal doesn't stand a chance when the wife has got her bacon groove on!

Hit40- The moisture you'll get from the veggies won't hurt the flavor, but you will have to thicken that gravy with cold water/flour paste, or corn starch/cold water paste...Good Luck!

I'm all about BLTs without the Ts. And sometimes I make a sloppy egg sandwich with mayo, mustard, cheese and crispy bacon on squishy white bread with butter. I don't know what it is about squishy bread with crispy bacon...

BACON, BACON, BACON, BACON, BACON! Nothing could be better. I make brownies every Tuesday night. Brownie Tuesdays are a brownie on a plate with pudding and whipped cream, sometimes a chocolate or butterscotch topping...you get the idea. Breakfast for supper occurs here on a Friday or Saturday night when I'm uninspired, and I think beef soup is coming my way this weekend - I have a bowl of wild rice in the fridge that needs to join a soup pot soon. The bouillon cube is a much maligned, underappreciated, marvelous piece of convenience for those of us not given the gift of endless cooking time!

I keep saying I have to buy a crock pot. All I have that's kind of "fancy" is the Hitachi rice maker (what Cuban doesn't own one of those?).

Btw, I've only seen crock pots in pictures. I know nothing about slow cooking!!

Kate- Everybody, if being honest like you are, eats some stuff that doesn't make sense to anyone but themselves!
Marjie- Beef and wild rice soup is an excellent combo!
Scarlet- A slow cooker is very useful! Our latest one is large, many heat settings, and seals tightly for traveling to a pot-luck! I have three, one on permanent loan where I bring food occasionally...

I understand where your wife is coming from. I also love BLT but minus the lettuce. Why ruin a perfectly good sandwich or burger with lettuce?

First of all, breakfast for dinner is the ultimate in comfort food for me!

But the bacon looks like a great cut. I love great bacon. Even on a BLT minus the T :) It's amazing what we do for our spouses, isn't it?

This brought back some memories! My Mom was Appalachian, and cooked EVERYTHING in bacon grease. We always had a pot of it sitting on the stove, ready when needed.

Wow reading through this post makes me so hungry. It all sounds fantastic!! I too save bacon grease, excellent tip. Your beef barley soup in a crock pot is giving me ideas for dinner tonight.

Chris- I did a post on this breakfast for supper thing a while back, and it turns out is was, and is- a widespread practice!
Mona- My wife puts up with a lot to get the good food!
Jeanne- I don't use it a lot, but it comes in handy!

We often have bacon for supper too! You can't beat a nice bit of bacon. We get ours from the farm downt the road where they breed their own pigs - delicious. :)

Hit40- When I saw you added veggies, I was afraid the extra liquid rendered would toughen it a bit. If you own a pressure cooker, or a Dutch oven, you surely will make it as tender as you want..pressure cook until tender, finish roasting in oven with flavorings...
Casdok- Good to hear from you!
Ake- Bacon seems to be universally beloved!

If you are ever near Birch Run, visit Tony's, right across from the Outlet Mall. Their BLT has a full pound of bacon on it. Two meals automatic!!

Delicious. I'm also working hard on 'not heating up the kitchen.' I do have the toaster oven plugged in out in the garden which helps a lot and I think we'd fail completely if we didn't have the barbeque.

I don't like 'maters on my BLT either. But bacon looks boo-tee-ful! I sure could go for those brownies right about now.
