Enjoy A Lettuce Free Salad And A Scavenger Pizza..



We have enjoyed a half a cantaloupe (locally called muskmelon!) filled with chicken salad, tuna salad, or shrimp salad for years... Monday night, it was tuna- and it was a big one! White solid Albacore tuna, eggs, mayo, mustard, celery, onions, with lemon pepper made a nice filling for a huge fresh melon!
Tuesday..the best laid plans of mice and men... I was going to do a pizza stone pizza, when I figured out I had no corn meal.. did a pan pizza, with modifications! No bulk sausage- so I used brown and serve links chopped up.. used fresh onions, mushrooms, pepperoni, less Mozzarella and more Parmesan and Romano. The home made sauce was killer, and the from scratch dough rose beautifully! My brother in law was here..bachelor type- he went after it like mad, and went home with left overs!
As I write this, an authentic Irish lamb stew is cooking.... The broth is killer because it "jellied" after simmering! Carrots, onions, celery, potatoes, and lamb will be the real deal- no beef or chicken broth, just a little brown gravy for color..
Come on over- plenty for all!

And I never knew cantaloupe was the same as muskmelon.

I have been eating a lot of lettuce-less salads lately. Mainly tuna, chicken and egg. Yum.

Jellied broth? Good times.

You've been cooking up a storm! I love fruit in place of lettuce and many evenings serve cantalope, watermelon, strawberries, etc.. instead of a green salad. Yum.. and so good for us!

BD! That salad sounds delicious. I love cantelope almost any way you fix it. The Irish lamb stew sounds good, too. I'd love to just show up with a bowl and spoon, but I'd be missed up here at dinnertime. :P

Vick- Lamb stew almost done..aroma is fantastic..Biscuits for soaking up gravy is done, too!
Brian- Salad is great, but I need people for all this stew! Kid gets a load of it shortly!

I thought every pizza was a scavenger pizza. At least that's how it is at our house. And with stir fry. And omelets. And rice pilafs. And....oh well, we're scavengers:)

That melon salad sounds yummy. I don't care for tuna, but I bet it would be good with chicken salad.

Frying Fish and Hushpuppies Southern style tonight. My tried and true recipe of 60 Flour 40 Corn meal, Buttermilk dip to make it stick with Hush-puppies and onYons, New potatoes and a SaLad!
Any secret tips from you end?

We always called them muskmelons growing up. I called it that one day and my girls were like "Huh? It's a cantalope Mom!"

My mom used to eat cantaloupe filled with cottage cheese, which I always thought was gross.

Some people call them muskmellons around here, too. (When I was little I thought my grandma was saying 'mushmellon'.)
