Easter Dinner 2010




Saturday, I spent the better part of an hour, deboning a leg of lamb... This is work! I took a 7-1/2lb. leg of lamb, and turned it into four fat free lamb steaks, which I marinated in olive oil, red wine vinegar, chopped garlic, coarse ground salt and black pepper, rosemary, and thyme for 20hrs., refrigerated.. This was grilled over charcoal- which is my favorite way to have lamb!
I made a sour cream and chives scalloped potato dish, that disappeared completely, along with some excellent asparagus, cooked to crunchy done, that also got gone! Crescent rolls- gone..
The cheesecake was a hit, with caramel sauce..quite rich- two people ate it plain and loved it..
Leftover lamb will be a genuine Irish lamb stew Wednesday, as I simmered the leg bone into a tasty broth...Hopefully, there will be a few sales on today for ham, lamb, and turkey!

I probably would have drank the caramel stuff. I like things ridiculously rich!

DogB- Came out medium- good but not as rare as I would have liked..
Heff- Bitch to debone, and trim! Worth it? Barely!

Fabulous Easter dinner, BD! Wish I could have had some of your marinated lamb!
Our rack turned out well, but I wasn't thrilled with the mustard/rosemary topping I tried this time. Will stick with my herb topping the next time. And a potato fennel gratin was a big hit. And some cheese biscuits I had never made before. Then I tried Inn Cuisine's carrot cake muffins. They were moist and delicious. Will make them again. Do you believe I took NO PHOTOS??

Leftovers went home with a son...

mmm...the lamb and lamb stew sound really good...had ham at moms...and a potato caserole that was amazing! but she could not remember what she put in it...lol.

I had Lamb for the first time on Saturday and I liked it...I was suprised

I'll bet those scalloped potatoes were a hit. One of these days I need to make some, but would require me to do advance cooking planning ;-)

Darngirl- Most people must try it done properly- they usually love it!
carma- Make normal scalloped in white sauce, add sour cream, top with fresh chives 20 min. before done.. flavor is distinctive in a good way!

Yeah, I cheated and got mine de-boned by the butcher. It was wonderful!

I have only made one leg of lamb and that was roasted. If I ever grill one, I will use the charcoal instead of the gas Weber upon your recommendation. I should run out and see if there are sales on lamb! Thanks BD

Sounds wonderful! I've never made leg of lamb. I'd love to know the secret to the non-cracking cheesecake too!

Lamb is one of my favorite meats - especially at Easter time and over REAL charcoal - oh, you are making my mouth water. I have a rack of lamb in the fridge that I'm making tomorrow night (long story, but it was supposed to be our Easter dinner).. think I'm going to have to break out the charcoal grill!

I LOVE rare lamb on the grill - but I'm the only one in the house that will eat it. I buy small portions to get my fix. Nice dinner, BD!

Highlander- I have a nice gas grill, but nothing compares to charcoal or hardwood for cooking outdoors! Especially lamb!

Vick- I like rare, but I went a little past that this Easter..still good, with Lamb stew coming!
Griller- I love it, but not all around me share this!

I've only had lamb once in my life. It was really overcooked and dry how they made it but fortunately I like my meat that way!

One heck of an Easter meal, BD. I've never boned a lamb shank before. I bet it was a pain but worth it.

Deboning a leg of lamb is something I'll probably never do. That cheesecake looks awesome tho...

BlueV- Everybody is different when it comes to doneness..
Chris- ONce a year is plenty for that job! Chops are easier!
Chef- If the bone was straight, it would be easier.. but it takes a right turn at the joint, and can be hard to follow!
Momster- Thanks for award... you may have noticed I don't post them- I like the newer bloggers to get them for encouragement!

PS - I'd love to make aspargus JUST RIGHT. It never comes out good for me, no matter what advice I'm given. :(

Better yet--getting new grill and doing my OWN steaks and ribs...been wanting to for years, and now finally have the energy to go after it!!

Almost wanting to go back to Charcoal for a few seasons!
