Scotch Eggs, With Toppings- My Way!


These are my version of a Scotch egg...Normally these would be deep fried with a light bread crumb batter, but in the years I have been making them, I prefer to roast them sans batter. I do mix bread crumbs into the sausage as an aid to "bind" them with a bit of seasoning and liquid.
1. Hard cook 4 large eggs, until cooked through
2. Peel, and cool
3. 1lb. bulk sausage, your favorite flavor
4. Pack each egg in 1/4lb. of the sausage, like it was a snowball!
5. Bake at 350F on an oiled shallow rack for 20 minutes, turning the egg gently over, baking another 20 minutes.
6. Cut carefully in halves or quarters when cooled slightly
7. May be served hot or cold, with sauces of your choice, or plain
This is a popular appetizer, or a quick breakfast..guys hunting insist I bring a lot of them to deer camp!

I've been reading about scotch eggs for quite some time now. I don't even know how they came across my brain in the first place. Nice to know that people actually make them.

Recently, someone told me how to make an easy omelet:

pan of boiling water
2 eggs beaten well
add any ingredients/seasoning you like (I added grated cheddar)
Pour into Qt. size Ziplock Freezer bag, remove air and tightly close bag, toss in boiling water for 13 minutes, flipping bag over once.

They turn out perfectly every time!
And they are so fluffy. Try it.

They're really good for serving several people as they can add what they like in their own.

That is one dish that I have always wanted to make, especially since making fattys, but I still haven't. I like the presentation with different toppings.

This looks delicious, and actually within my limited capabilities.

I'm going down to the basement freezer right now to grab the pound of bulk sausage in the freezer and bring it up to thaw in the fridge for Sunday morning breakfast!

This is a new recipe on me and it looks great! I wonder if they'd be good with spicy Italian sausage - maybe with a spicy marinara sauce. and a little parmesan grated over. The possibilities! :P

I had scotch eggs when I was in Great Britain. Loved them. Never would have occurred to me to make them! Great recipe, BD!

Barb- When first married, grocery store had a series of books called "Cooking Around the World" for cheap..every week a new one was there..I got this from the British-Irish one.. this week, corned beef for sure!

My pop and I say that I bet bacon grease would be best! He say muton tallow would not be a good choice...I said gross

I have never made Scotch Eggs and now, because of that picture and recipe I want to make them more than anything... what is the best topping in your opinion? Tell me more...

ps. And look how nicely centered your yolks are! Do you use the trick of tilting your raw eggs for 12 hours before you hard boil them?

I just learned a trick for keeping the yolks centered, stir them while they boil, it worked for my quail eggs...I can say for sure I will be making these babies! I like the fact that I can click on that photo and enlarge them! Now I wish we could reach in the photo and pull a few out!

Good Cook- I just scoot them around the pan while boiling- that's it! Toppings? The sausage used dictates the topping for me..I like hot sauce on eggs, but people always love melted cheese...Marinara for Italian sausage, brown mustard for Polish sausage, etc...

I've never made a Scotch egg but do enjoy eating them. But I don't like them when they get so gigantic!
