Reuben Casserole And Brownie With Ice Cream!

I mentioned I had a thought of a corned beef hash that wasn't "hash", and here it is! I sliced Yukon Gold potatoes to scalloped thickness, placed them in a buttered casserole dish, topped with onions that had been sliced and chopped..I added cooked corned beef pieces, and cooked covered for an hour at 350F. I then added sour cream, more butter, milk- and topped with Cheddar cheese, shredded- and baked for another 30 minutes uncovered. The result was a casserole re mindful of corned beef hash, but with more definition of ingredients- not a medley like hash!
I made a dark chocolate brownie for dessert...cake like, with white chocolate chips, cherry flavored crasins, and walnuts. A side of premium vanilla ice cream really went well with it!
I invent this stuff, no recipe- just ingredients I think will work together..
I admit to non event photos on this one, but the food was good!

Corned beef is really good, but I have to be in the mood for it. Now the desert on the other hand.... always room for it.

mmm . . . a corned beef casserole sounds really good! I'm going to file this away, because I tucked a couple of those in the freezer when they were such a bargain. Nice idea!

ChefE- I should have mixed the sour cream a bit better, but son and his girlfriend wiped out leftovers yesterday!
Pam- Brownies were moist..with ice cream, simple but tasty!
otin- Brownies are the universal language...
Brian- Layered, it seemed less of a mish-mash..
DogB- I wanted to do that, but wife- not so much..
Heff- It goes in flurries- and I do get tired of it sometimes..
Darngirl- Go for it!
Chris- Omitted the saurkraut for casserole- just didn't seem to fit anywhere in the recipe...
G-man- Love pastrami, but wife doesn't..I have to order mine when eating out!
Momster- My wife's favorite is any kind of brownie..
T.T.- The use of more eggs always makes a brownie more cake-like and soft..
Paxford- I've got to try some other desserts soon!
Vick- Just another way to skin the cat!
Barb- They are disappearing fast!
