A Million Meat Loaves..So Little Time..


First off, I can't (or won't!) make a small meatloaf! 3 lbs. is my average.. This fills a bread pan nicely, and if you crown it a bit, no overflow of grease or anything else-although I do put a piece of aluminum foil under it, it case of miscalculation!
2lbs, ground beef
1lb. ground sausage
1 egg
1 cup of prepared bread crumbs
1/2 cup total of parsley, sage, rosemary, thyme, black pepper, sea salt, garlic powder, and onion powder- your portions..
1/2 cup ketchup and Worcester sauce,(total) mixed
Mix all above by hand until blended
Pack tightly in bread pan and bake at 350F for 90 min., add a bit of ketchup mixed with prepared mustard for topping, bake at 230F for another 20 min. until glazing a bit. Pouring excess grease off around 70 minutes is a good idea..
Let sit for 5-10 minutes before cutting..
The reason I don't use chopped onions, celery, green peppers, or any other veggies is moisture content..I like firm, slice able meatloaf- and this is how to get it!
A side of brown rice seemed to work well with it..as our larders are getting low...

Because I'm a single gal, I often make mini-meatloaves in muffin tins and then freeze them.

Kate- Everyone around me loves my meat loaves... They get gone, but I am indifferent to my own cooking!

My favorite part of meatloaf is the cold meatloaf sandwiches the next day. I use a thick slice of meatloaf, add sweet pickles and mayo on wheat bread. LOVE it!

MMMmmmm that sounds so good. I love cold meatloaf sandwiches with ketchup. I don't put fresh onions in mine, but I use French's onion soup mix instead. Crap, now I'm hungry.

One reason why I did not like meatloaf growing up- my mom put chunky bell pepper, onions, and other objects, I like mine like you made it!

I make mine like you do. I hate a bunch of stuff added to meatloaf. I also never make on smaller than 3 pounds. I love meatloaf and gravy biscuits for leftovers and another regular here is wrapping leftover slices in puff pastry topped with gravy :-)

I make my meatloaf in a big pan, and they range from 3 to 6 pounds. A side of pasta is always a hit!

I don't think I've ever measured the ingredients for a meatloaf. As a result, I don't think any two of them have ever tasted the same. Sometimes that's good, and other times...not so much. I usually lay a few strips of bacon on the top of it as well.

I love meatloaf and I'm with some of your readers - cold meatloaf sandwiches with ketchup remind me of my childhood.
Hmm.. now I'm going to have to make a meatloaf before the winter is done. Mashed potatoes are my side of choice - all buttery and warm.. oh my!

Ruth- Comes out with an underlying herb flavor we like..
Vick- Next day this is so firm, you can cut it quite thin if you like..
Christie- I forgot the black pepper I use with it!
Snow- An American classic!
Char- Through chili contests, I've learned to use powders for flavor, without screwing up a texture..
Gloria- I make this often for my family..
Chef- You can always saute peppers or onions, and put on meat loaf- not in it!
Brian- My wife likes it far more than I..
Martha- I hope more people try it without bits of veggies in it!
G-man- Meat loaf can be flavored so many ways!
Marjie- 6lbs.! Long cooking time?
Jeff- I find with sausage, I get all the grease I can handle without bacon!
T.T.- Can make meatballs with same recipe!
Good Cook- Ketchup seems to be the favorite with meat loaf!

After my boys left home I never did get used to cooking for two - I always make a huge amount and freeze some. :)

I've never tried sausage meat in mine...interesting addition.

However, I have been making something called Bill Blass's meatloaf for years. Or I did when the kids were home. I must admit, it's not my favorite meal. Don't think I've made one in 10 years.

BD... What's the fat content of the ground beef?

I use onion (which i won;t next time), but mine still seems too fatty and juicy. Difficult to serve as slices

Griller- 90/10 beef, sausage fatty.. drain and skip veggies- comes out firm!

I think I have only made this once in my life - I would like some the next day - two slices (thin) with a little mayo and mustard, lettuce and tomato on plain white bread - now that is deluxe!

I had to go do a search on my blog to be sure - I made a turkey meatloaf once and another "meat" loaf and then some terrine "meatloaf" so I guess I have made it ....not memorable thats for sure!

Meatloaf? I don't miss it. But then I don't think I've ever had one I like. After all I've read about your cooking, I would be willing to take a bite of yours. But make it? I'll have to think about that.
