Chef's Salad..Sounds Light, But It Isn't!




The master of overkill lives! I start out with the best intentions, and end up with far more than needed....I know, I've watched me do it!
With that major shortcoming announced to the world, last night I made a Chef's salad for my wife and I. As the photo shows, the ingredients were hard cooked eggs, tomatoes, shredded Cheddar cheese, celery, carrots, slices of both turkey and ham, three kinds of dressings (spinach, blue cheese, and Russian) and oh yeah! A dab of lettuce.. I offered croutons, onions, and bacon- but my wife gave me that "You're doing it again" look....
I have had some digestive issues lately, and haven't been the cookin' fool I usually am. Needless to say, I made a so-called salad I couldn't possibly finish! Wife is making a salad for lunch from left over toppings for work tomorrow..
For tonight, I am toying with a creation that would have the ingredients of corned beef hash, but layered instead of mixed together.. we shall see...

Beth- More work than cooking, is chopping!

I have been ripping up carpet and throwing out furniture all morning so I could easily go for one of these jumbo salads right now!

BlondeD- Hard to call it a salad! More like a Deli on a dab of lettuce!
Brian- Won't be hash, but the flavors will be there!

Momster- Salads, after chopping- are easy eating!

I love to eat salads like that. If they're too heavy on the lettuce they don't satisfy me. Plus they just taste too green.

RE your last post and memories...funny. I remember a married couple (guests) at a New Year's Day party left to go upstairs to enjoy each other and three of us were caught in an adjoining bathroom and couldn't get out.

And now, your chef salad. Sounds pretty good to me! My daughter has been here and we have been eating out and embibing way too much. We have so much fum together! She went back today and a salad is all I'm having for dinner! And lots of water!

Barb- Why are we embarrassed when other people should be! Don't drink water...fish have sex in it!

Had to chuckle at "a dab of lettuce" I love a good Chef's Salad and this you one made sounds more like a feast! Love those oranges for garnish.

Heff- I was great- but too much to eat all at once!
Highlander- The oranges were a nice touch..I ate the darn things, and liked them!

That's just how I like my salads! When I go to a salad bar, my plate weighs a ton, because there about 3 lettuce leaves on it and the rest is all the good stuff!

Angela- Not one to brag, but I wish more were here to enjoy! I like others to enjoy, me..well I am a simple man-happier to watch others eat than eat myself...

I always cook too much, it's a cook's right and curse. It's either too much of one ingredient or way too many courses. Such is life. (and good eating!) I hope your digestive track gets back on course - I can't have a fellow cook on the blink.

carma- Blue cheese is my "go to" dressing, but this time I mixed a little Russian dressing with it..a little too rich!

Sounds like a great lunch or dinner to me. Chef's salad is not the same without excess - but no onions on mine, please!

Hubby does not like it when I go hog wild making large salads and then tell him its our dinner, especially when I sneak bacon in under his lettuce, lol, he says its a starter dish...hold the lettuce, lol!

ChefE- I have never seen anything but a rabbit eat lettuce plain!
Chris- Salads in restaurants lately look like grass clippings and mulch..
