Simple Sunday- Baked Chicken Breasts, Rigatoni Alfredo..



Yesterday I was in a small chili cook-off, took 2nd in category... When cook-offs are small, usually judges know who made which chili- which usually means their judgement can be a little different than in a bigger event. No sour grapes- all chilis were really good! I had to beat feet out of there to finish meatballs at a big birthday bash. I've made better, but they all got gone...
Today, I was looking for no culinary challenges, so I seasoned and baked some chicken breasts(bone-in). with a side of rigatoni alfredo.. Why not fettucini? I didn't have any! Besides, the the tougher pasta goes well with this sauce and mushrooms.
Odd happenings... My cook buddy works at the same company I used to 35 years ago. I was only there 1 year, when our project was cancelled and I was out of a job. He found employee files that should have been destroyed 20yrs ago- still in storage! Found my employee record, and gave it to me yesterday. The boss of Engineering had been there 6 months before I arrived, and was gone 3 months afterward! My review said I had an attitude(imagine that!) but thought with training I could be a better employee(I was 19- 20yrs old!). They later tried to rehire me, but I was making more money and had found out on the streets what a bunch of schlocks that company was! If I had stayed there, I would know half as much as I do, and made about 1/3 as much as I have so far... Change ain't bad- at least not all the time!

Jobs are interesting like that--I'm finally moving onto a new one in a couple weeks, after a few years of abuse ;)

Your dinner looks scrummie...... I did a crown rib of lamb covered with apricot breadcrumbs with crispy spuds and simple steamed baby carrots and sweet peas....

I agree. I hate change but it always worked out well for me when I accepted it in the past.

Congrats on second place. Can you believe that I have never tried chilli? And I am fat. I just never had the opportunity for any homeade chilli. Dad was born in Calabria so you can imagine what I ate growing up.

My favorite food is chicken, my husband claims I will start clucking I eat so much of it! Those look GOOD to me!

Tonight, I would be happy if all I had for dinner is mashed potatoes and gravy. I have had a serious-bad hankering for them lately! :P

More importantly, Congrats on your chili winnings!!! I have GOT to get to MI to taste some sometime. :)

I am one of those "everything happens for a reason" people, so I mean this when I say "I'm glad they fired you." I think you and your family only benefited from it.

I always enjoy finding/seeing old records, reminders of time gone by and decisions made. It's true, change can be a very good thing.

Another fine job with the food...good idea with the rigatoni...
and pretty funny that those records still exist...like you said, you're so better off now...but I bet you didn't think that then.

Snow- That firing was a week before I got married! We walked down the aisle-both of us unemployed!(Had a job starting after honeymoon though!)
beth- Pasta was good with the chicken, coulda used a little more spice..
dana- Not really. The plant has been there for 80 yrs. and that company has been in it for the last 60... whole third floor was used for storage only..
annie- My job app was in the printing style I still use to write with today!
jen- I learned alot there about practical engineering- not the stuff they were teaching in school!
odat- I was alot hurt, but they let 3/4 of that department go by summers' end- project was finished..

Simple Sunday? Buff, if you call this a simple Sunday, I could give you some lessons on the concept of "simple"!!

I love chicken, and I cook it SO many different ways, and no matter how you cook it, it's always good.

I tried a new recipe last night. Spaghetti Pie, and man oh man was it good! In a 9x13 pan, you place one pound of cooked Spaghetti. In a bowl, you mix some sour cream, cream cheese, and I added mozzerala and parmesean, with garlic, pepper and salt and spread that on the spaghetti. Then you take two jars of sauce and mix with one pound cooked hamburger (but I always use sausage). Pour that on top of the spaghetti and cheese mix, sprinkle with cheddar cheese and cook for 25 minutes at 350. Holy Crap it was good! and my kids loved it, too, which says a lot.

The chicken looks delish. We had Salmon en croute.

Ake- I actually had started interviewing a little before it happened! I was a kid, but other places couldn't believe some of the tech drawings I had done..

DogB- You had to be there.. One of the judges was the husband of one of the winners...Nothing bad in the records- just interesting...
