A Fill-In Food Blog... The Rest Of Sunday..



Even though I was "cooked out" after Saturday, for some odd reason I was moved to cook more.. After dinner, about mid afternoon, I decided to use up some thawed chix breasts, and make chicken salad- for sandwiches, or filled cantaloupe. As that was going, I decided to use up a half a box of graham cracker crumbs, and some leftover Key lime juice, and make a version of a lemon bar, only different! I made a Key lime bar, with a cracker crumb crust, instead of the usual shortbread crust... Tart and tasty, topped with powdered sugar(I topped mine with whipped cream!) they are are refrigerated snack that disappears over a few days..

I *heart* chicken salad and no one in my family will eat it! I don't know what's wrong with them ... well, actually I do but that would take up WAY too much of the comment box :)

thats great...that lime square sounds really good and I dont like citrus desserts.

curry chicken salad lasts only a few minutes around here.

i do loves me some chix salad. i make mock chicken salad now and i have to say...not bad.

& so does the Salad

Buf, what do you use for Salad dressing there? Is that mayonnaise?
I have seen people make dressing out of hung curd ( yogurt) which tastes really good.

dana- We had some in a half of cantalope for supper Tuesday night- light and refreshing!
jen- Because in New York City you don't need one!
leighann- I need a road trip...!
Dog- I make a pretty basic one, about enough for 4 servings..
Tanya- You mock your chicken??!!

casdok- There's only two of us- it takes awhile!
mona- alot of different dressings can be used- this one was mayo,mustard, and a little veggie dip!

But it does GOOD! That's one thing I've never made. I don't think my kids would eat it.

annie- I make a mean lemon or Key lime bar- but I do prefer the shortcake crust, and many other fruit flavors can be used! Love to cook for you someday!
bina- Oh, Cinderbina-(didn't you just love that?), sometimes you have to do things for you- not the kids! They'll eat the Key lime bars...

Key lime pie sounds divine right now--conjures up images of sunshine and warmth.

Yum....... those fridge snacks would last all but 20 minutes in this house with me lads and there maties always raiding me fridge....
