Snow Day Means Cook Neat Meal Day!

Sunday main meal was kind of good! Bone in split chix breasts, and the dark meat guy(ME!) got thighs. Marinated in olive oil, red wine vinegar,water,garlic,onion, salt,redpepper,basil&oregano. Baked for 1-1/2hrs at 300F, uncovered-for crispy skin.
The side today was cauliflower-steamed for 5 minutes then cold shocked with water. I make a lighter Alfredo sauce to go on it before baking like this; butter melted in sauce pan, add flour black pepper and salt. Milk next, bring to simmer stirring often. When it thickens I add grated Parmesean and Romano (Both the real deal!) and a touch of garic. Pour on cauliflower and bake along w/chicken for 30 min. uncovered. Rasberry muffins w/butter (I bought 'em!).
Dessert was simply a box fudge brownie mix that I added cherry extract, cherry juice and chopped marchino cherries to. Simple and tasty!
The rest of the day was spent pis*ing and moaning about the weather!

mmm, cauliflower with alredo sauce! that sounds delicious. i don't think i've eaten them that way. i ADORE cauliflower. do you ever use the purple kind?

Why was it only kinda good? Sounds great to me!

We had hutspot yesterday. It is a Dutch dish you might be familiar with, where you boil carrots and potatos. I saute the onions, but sometimes people boil them too. And then I always serve it with a smoked sausage (Healthy Choice, because my husband and I are watching our weight, lol). It was great, considering the weather.

Finn-If I ever do a cookbook,it will be one of those rambling, short story, tale-telling types that I find more fun than the straight up here's-the-recipe Chemistry 101 books!
Pink-Never used the purple ,but would love to if I ever see any around here!
Lynda-Hutspot mit no lo-cal Mettworst? Honestly-I dislike the spice mix in Mettworst! I grew up eating Dutch type cooking, and around here, that meant boiling veggies until dead!

wow that all sounds good even raspberry muffins and I am no muffin fan. We should get a food mailing club going and when things are seasonal and available in our areas we share..at least by sending you some purple cauliflower.

Jen- My dessert that day was a guy getting rid of leftovers from the Holidays!
Tanya K- The simple things come out better than they should sometimes! And the snow- well we have kinda had it around here with it....
Dog B- I think the stuff is available, I just never thought to use it!
