Chicken Soup... It Couldn't Hurt!



Chicken soup.. Reminds me of an old joke (most everything does!).. Old Jewish mother coming up the stairs to give her sick husband a bowl, runs into her son coming down the steps. Son says to mother, "Ma he doesn't need chicken soup anymore- Dad just passed away". Undeterred, she tries to get by him, and once again he blocks her and says "Dad's gone, don't bother". Not to be stopped, she tries again to come up the stairs.. Now the son is getting angry and yells "Ma! He's dead! Chicken soup won't help!" She says to son, "Well, it couldn't hurt"...
With all the flus and colds we all run into this time of year, almost everyone will either buy or make some version of this most popular soup!
My version varies with what's in the house. This batch was made from chicken tenders, uncooked and unbattered, seasoned and baked until done- then cut in bite sized pieces. Seasoned chicken broth, chopped chicken, chopped carrots, celery, and onions are simmered together until vegetables are tender. I then add noodles (this time spiral pasta!) and simmer with soup until tender. At this point I do something a little different.. I add dry chicken gravy mix, that has been mixed with a small amount of cold water and add to soup. This thickens it a bit, but not too much- I want soup, not stew!
Hit the spot on a cold night!
When we don't want to fix a big meal, our "go to" lunch or supper is Nachos Supreme! Locally made white corn tortilla chips, loaded up with taco meat, shredded Mexican blend cheese, chopped green bell peppers, onions, and diced tomatoes. Simply nuked in a microwave until cheese melts, we eat with our favorite hot sauce or salsa. This is better than any you buy in restaurants around here!

My best soup recipes are the "whatever" ones - whatever's in the house that seems to coordinate goes in the pot. I love chicken soup! We've had a really ugly cold going around here, and chicken soup is exactly the ticket!

That soup looks absolutely delicious and I have now fallen for you. Unfortunately though, I found out my flu was all for show. I just got back from the doctor's office and they refused to hospitalize me for feeling like I was on my death bed. The bastards wouldn't even give me any good drugs. They told me I just have allergies!

Does that make me a wimp?

I believe sometimes less is more.. I could have added more ingredients, but the simplicity and depth of flavor is what everyone comes back to.. I never judge an ingredient- I judge the results!
Shelly- I should have send you the wrong prescription the pharmacy sent me- 180 pain pills! My doctor never proscribes anything I might actually enjoy... Get a backbone, you wimp..:) Hope you feel better soon!

Im with you on simplicity and depth of flavor in soups, I dont like too much going on.

Have fun at the wedding, no fair, 2 weddings so close, you know what that means right, weddings to me mean 2 big things, can u guess?

Donna- Both of these affairs are the biggest I've attended in years! The Father of the Bride is my best buddy, who is battling serious cancer.. Won't be a day of joy, without that hangin' over us..

That's exactly how I cooked mine last weekend, gravy and all! I usually put noodles in mine, but this time I made WAY too many dumplings!

And I have NEVER seen a picture of you so how could you make my list?? HMMMM???

The best soups come from whatever you happen to have on hand. Looks like a real pick me up for colds and rainy, cold weather.

Of course I remember their Dad, I was a kid when he played for the Saints. I went to Ole'Miss,you can't go to school there or live N.O. without knowing about this powerhouse family.

Soups on! I am making a Portuguese soup tonight, first time, but also an oldie!

Not sure why but this just popped into my head, my dad would say "I don't give a damn what you call me, just as long as you call me to dinner"!

My daughter hates chicken soup. She says that I always made it for her when she got sick, so it always reminds her of sickness. I love it....now I am craving me some good homemade chicken soup!

Ahhh Chicken soup for the soul...good for you helps thin out the mucous membranes and soothes the bronchials...I eat it often with lemon and a little hot chili la la sauce...mmmmmm

How funny!! We just made chicken noodle soup at my house too! My grandma- who passed away in 01'- made the best homemade noodles EVER! Each time I make them in our soup I think of her. Yours looks great too :) Great post!

Oh the so comfortable chicken soup. I eat it often but less homemade. Lipton soup with added chicken for more than just the broth taste...but I did make some greens tonight that were to die for...

Darngirl- We have a company that sells bags of soup in many flavors to restaurants in the area- you'd swear they were home made!
BlueV- A sure way to eat better, and save a ton of money, is to cook at home..
DogB- The only sodium was from the low- sodium chicken broth..Big sit down wedding last night- no food today!

i make the best tomato soup.

chop an onion saute it in butter over med heat.

add can of yellow tomatoes, heat, simmer. remove from heat, add pint of heavy whipping cream, cool & blend til smooth. (i like to save some chunky stuff)...man o man. simple yet DELICIOUS!!! oh and MOST IPORTANT, top with dollop of sour cream

Your soup looks great! I like making things with whatever's on hand sometimes, too. Lots of times you end up creating something really good! I'm totally with you on nachos! We do the same thing here at home. Yours look deeeeelicious!
