When You Really Don't Want To Cook, But Do..

I have had a bug going on 4-5 days, and food isn't high on my burning desire list. Still, it's my job in this house, and my wife deserves a square meal, after working long hours. She had to work Saturday, and the larder was getting lower..
I had some chicken tenderloins, and decided to make a chopped chicken in sauce, over egg noodles. It has been getting nippy over here, and comfort food starts to come back into fashion! A simple dish, I seasoned the chicken with salt, pepper,Lawry's Poultry Seasoning, and baked it for 15 minutes at 350F until not quite done. I then cut it into chunks, and added it to the sauce I had prepared. The sauce is easy- a can of cream of chicken soup, equal volume of chicken broth, some Lawry's Poultry Chicken Seasoning, with a bit of corn starch for a thickening agent. Boiled egg noodles while sauce was simmering, and meal was done..
Hardly inspired, but I can always make an edible meal that disappears..
When my kids were growing up, we always called this noodles and goop- and they loved it!

Sometimes simple is good and exactly what you want.

Once you learn the building blocks of cooking, bad food is only what you get at a restaurant!

I always enjoy reading what you've got cooking. My crock pot is currently simmering away my first roast, and I'm going the egg noodle route too!

I lived off egg noodles as a kid. This looks so good!! Simplicity is key with cooking sometimes. Some of my very favorite dishes are 5 ingredients or less. Hope you're feeling better. There is so much crud going around right now it's scary.

I love comfort food - broths etc. In fact I intend making some next week. :)

I hate that you're still under the weather, BD. I like this dish for it's comfort food factor and simplicity!

Sounds like noodles and goop is just what the Doctor ordered. Bless your heart, hope you get better soon. Hang in there BD

Good Cook- No, I'm getting better slowly..weather change hits us, and things go out of whack until freezing temps..
Griller- I don't drink Scotch, I like it too much... Last Scotch and soda I had... woke up in Idaho, wondering who was gonna pay for all these hookers.. :)
Jules- I've got a slow beef roast going, that will served with brown rice.. another "feel good" meal..
Rachel- When the wife cooks, it always is a recipe out of the Four Ingredient Cook Book!
Ake- I have never been to your homeland, but understand you get a lot of rain, and cold weather right now..chills to the bone! Time for warming meals..
Chris- A lazy man is usually a smart man! Thinking is easier than doing..
Highlander- Noodles and goop..we got so used to calling that!

My kids call this kind of thing "one pot surprise" but I call it "Friday night repast"! (Friday nights I refuse to cook anything difficult.)

buffalodick said...

Margie- That's where I'm at right now.. tonight, slow cooked pot roast and brown rice, crescent rolls, and that's it!

Shell-, well she screwed me up pretty good tonight, on time table.. Might post it, might not..
Denise- She's lucky right now not to be dead.. Timing is everything to a cook, and this went 40 minutes past prime..

LOL--my mom made the same dish (but with added peas) and we called it "Chicken and Goop." It's my sister's favorite.

It sounds really good and easy, which is a necessity these days. I used to call hamburger hot dish "Monkey Brains" when my son asked what was for dinner. He ate every bite and to this day still call it that. Neighbor kids aren't so excited about eating it however.

Michelle Ann said...

My mom used to make something like that....I adored it.

Hit 40 said...

So far I have avoided all the bugs at work. The kids are dropping like flies!! One school in my district had 40% of the kids call off sick!! I thought they had to cancel school if this many called off???

buffalodick said...

Jen- That is what make families, well, families!
Michelle- I revel in my peasant upbringing! People hear about black soul food.. Well, anyone who ever was one on that lower rung of income had a cuisine.. and it got you by..and it wasn't all that bad! It wasn't a race thing- it was economics!

buffalodick said...

Hit40- Slipped in while typing! Wish all of them a speedy recovery..You are a great teacher.. really..

Hope your feeling better now BD! I'd eat your noodles and goop anytime. That qualifies as perfect comfort food as far as I'm concerned!

Oh, I hope you get better soon! I am knocking on wood now, because we have felt so good over the summer, and hubby says he almost starved when I was gone in September...I have been craving egg noodles lately, and like them with most anything on them!
