Sharp Knives- The Only Kind I've Got!
About once a year, I get my automatic knife sharpener down from the closet, and give my set of Wusthof knives a thorough sharpening. Throughout the year, I just use a ceramic sharpener, and touch them up with a Butchers' steel.. The three stage sharpener is easy and fast, and I have always felt a sharp knife is safer than a dull one! Take note: These are working knives, not "show" knives.. Wusthof uses a blend of steel that makes them pretty corrosion resistant, and still easy to sharpen- unlike the usual 440C Stainless steel knives! The handles do not like the dishwasher- I learned that after it was too late..Missing in photo- the kitchen scissors, which didn't need sharpening this day.. Even with all my kitchen gizmos, I still prefer to use a knife!

deb- Well, I don't look as good as some people do in a bikini..
dogB- 12:15 pm- and I love that watch! Seiko Kinetic; never wind, mechanical motion charges a capacitor, which stores the home made electricity and meters it to a quartz movement!

The sharpest knife in my house is my camping buck knife. hen we have like 3 kitchen knives....all dull. would not know how to sharpen them right anyway. ......teach me , oh master of the kitchen!!!!!
ahhhhh....i love sharp knives. now if I only had one, life would be great!
I sharpen my knives before I use them just with a sharpening rod...it works great!
Ooooh that photo looks like a surgeon's table all set for an operation!
MWM has a thing about kitchen knives so I didn't show him the photo as he'd have got all glassy eyed! ;)
Yikes! the sight of all those knives gives me jitters! I can imagine what all they can chop !

When we was kids, there use to be a bloke that came around the estate on a bike with a little trailer on the back, he was 'The Knife Grinder'... I remember he would come in the spring and all the mothers would wander outside when he shook this huge handbell... and he would turn the grinding wheel with a manual footpedal (like on an old singer sewing machine)... use kids would watch in fasination and sometimes there was even sparks..... my mother never used The Knife Grinder Man, but prefered to sharpen our main kitchen knife by grinding it on the back flat smooth stone step.......
Something that I do myself today in this little cottage....

The very best kitchen tool is a sharp knife.
I also use a ceramic sharpener AND a steel rod.(No double-entendre intended)

Wowza--great set of knives! That's one area of my kitchen I haven't invested in, yet. I keep using the old, cheap ones--hopefully they'll fall apart soon!
marmy- I would love to make or sharpen knives for a living... After 35 years in the steel business, my love for steel has not diminished, but selling it has gotten very stale..
G-man- I have knives, and have consulted on what to make knives from... I love the darn things!
Tavolini- I have knives I bought used at gun shows for 3 bucks! I bought my son a handmade knife from a guy in the area for $200! Probably worth a thousand by now!
I'll definitely sent a link to this to Clint; he's been buying up Wusthof knives on the side, saving them for the new kitchen christening. That's going to be *quite* a day!
Finally the mystery man emerges...
I couldn't agree with you more about sharp knives. We also have Wusthoff knives and have been very happy with them. I sharpen them with a whetstone, but I should have them sharpened professionally.

That's alot of knives...I have many knives, but I always end up using the same two...no matter what. But I still covet as many as I can buy.
gnightgirl- Don't know Clint, but aquired my collection over two years.. Have two blocks of knife holders from the company to hold them all!
UrbanV- The sharpener shown is used sparingly, as it will remove metal from the blade!

michelle- Truth be told, I use about eight of those knives often.. the others, occasionally..
Life is too short for dull knives. Have you ever used any of the ceramic knives? I hear they're wicked sharp and are great to own.
Jeff-I am familiar with ceramics both industrial uses and recreational (Hunting knives!) They are silly sharp, and hold an edge a loooong time! Hard, but not impossible to sharpen... Not terribly tough- that's the trade off between hard and tough..
I really, REALLY wish I had a great set of knives like that!
