Week-end Steak And Potatoes




Winter has me feeling less than creative right now-sorry! I broke out a pound of breakfast sausage, and paired them with a cheesy hash brown potato casserole. A simple cup of leftover island fruits from my POM salsa, lightened the meal a bit!
We had a couple of marinated steaks the following night, with the left over casserole...
I'm working on a pomegranate juice/liquor BBQ sauce, but need to lighten it a bit..Yes, I found pomegranate liquor! It's a low proof (34) sweet liquor, that should add a dimension to the sauce..
Tonight it will be a Mexican style chicken-but haven't decided what!

I always feel less guilty about heavy breakfasts when I add fruit. It TOTALLY cancels out something. POM BBQ sauce sounds like a wonderfully creative and delicious idea. What times din? ;-)

We all have uninspired days... and you post about a lot of meals. I know I couldn't do it! That being said, I also don't think there is anything wrong with simple when you are cooking for two. Those simple recipes are usually the ones we like best.

I love that you are finding so many things to do with your Pom. Can't wait to read about you bbq sauce.

I have seen that liqueur around...what I love about the POM is it makes a great demi-glaze with the syrupy'ness of it when reducing!

Sounds like a great meal, I would just sit at the table and eat it all up!

POM salsa is a great idea!

Kris- I find cutting it with citrus really works..
Brian- Tonight, it's Arroz con Pollo in a one pan dish!
Ake- I left out the two home bread loaves that were less than stellar!
Jules- Still fishing for the right ingredients for BBQ sauce..
Barb- Me either! still testing..
Kate- Made a fruit salsa for seafood with it...
Chef- It's sweet, but refreshing- and a good match for other ingredients..

Hang in there Buff, in a week it will be March. That sausage casserole sounds pretty darn good and always hard to beat a good steak.

Highlander- Winter here hangs on like a fungus! Nothing to see snow in April..I've seen it in May!

Sounds great! You are hooked on the POM aren't you? I am too! It makes a great glaze for pork roast too reduced with brown sugar - and pie too!

I'm with you - I've had a bellyful of winter and cannot wait for a little sunshine. Year before last we had a freak snowstorm in June. That really pissed me off. Enjoy your Mexican chicken!

Looks like a good winter meal to me. They're promising us 3 storms this week, although the first one is fizzling out. I think those weather fools just like to scare or depress us regular people!

E.D.- I tried creative last night, and now I have to fix it!
Vick- Chicken didn't work like I expected- will convert to a soup soon..
Marjie- I'm supposed to be buried in 8"-10" of snow- we got a total of about 4"....

BlondeD- True story! I spent some time between 9th-10th grade getting hauled to these competitions..I didn't like baton twirling that much, but being surrounded by half dressed, too much make-up girls my age wasn't too bad!

Griller! How's hot weather feel? I live in a frozen Hell... POM booze is sweet- plan to cut it with citrus...
