Buffalo Dick, The Junkyard Dog Of Leftovers..


I had about 8oz. of corned beef left from two briskets I did.. just about the same amount of baby Swiss. Chopped into small bits, mixed with 8oz. of cream cheese, flavored with horseradish, thousand island dressing, chili sauce and a bit of onion, it became a rather tasty spread for crackers- a Reuben dip! 30 years ago, I had my first Reuben sandwich- and loved it! 25 years ago I tried Reuben soup, and it became one of my faorite soups! I have played with a spread made from this flavor meld before, and this one works...
I believe the true secret of being a decent cook is to think about how flavors go together- as simply as possible... You don't need quail's eyeballs to make it tasty! Simple things done well, don't go home as leftovers...

Quail's EYEBALLS? Is that a pseudonym for "pepper" (I can understand pepper.)

Corned beef cracker spread.. that is a new one for me. I can see it being a huge hit with my NY relatives.

P.S. After seeing your MYOPizza post, I made our own French Bread pizzas last night.. YUM!

CDB- It's just my way of saying you don't have to wear a tux every day! Astounds me the number of people that put uneeded ingredients into their food- and brag about it..

I have never heard of reuben soup--very interesting!

Dip looks good--dips are such a wonderful food :)

Doc- I really loved the stuff, when it first started showing up in a couple of restaurants around here..
Mona- Thanks for upate- still pulin' for you and family!
DogB- I miss that old broad- back before cooking shows were on 24/7!
Kate- Doesn't make you a bad cook, but with a little planning- you can save a lot of money!
Pink- Stormed the world about 25 years ago, now it's just another soup...
Anette- I tend to bring appetizers to the social functions I attend..They're handy, popular, and keeping them super hot or cold for a short trip isn't a big deal!
Belle- I went through my "overkill" phase and found out what I say is true- "simple things, done well"...

T.L.- chix broth, cabbage, corned beef, topped with Swiss cheese, and rye croutons.. easy!Or a cream style soup can work too..

Im with you on your sentiment. I do not have a creative bone in my body regarding new recipes. I use someone elses and then try to make it my own by adding , deleting whatever. I am not a quails eye kinda girl.

Donna- I really enjoy your blog, but have a tough time getting on it! Your last post was arousing/funny/tasty- not everybody can do that in one post!

Ake- In America, I bet you could! I just have gotten into the habit of using that analogy for needless extravagance!

K- some people's idea of gourmet food is adding ingredients they have never heard of, and having them make no difference!

I love reuben sandwiches I mean love...something about the sauerkraut and the bread...mmmm darn know I really want one...

Chef- If I had not seen it, I wouldn't have believed it... I was torn between kicking him out, calling the cops, or leaving him alone.. I warned him, and let it lay..Made me think about harmless people that have so little, they live on the streets like feral animals...

Scarlet- Anything works! Soup has numerous recipes- chick base, beef base, or cream style..

I slept late, am sitting here drinking coffee and contemplating breakfast while I read blogs. I actually salivated when I want this recipe.

I'm not a big sandwich person, but I cannot turn down a reuben in any given deli, diner, or restaurant.

And now I want reuben dip for breakfast.
