Quick Meal That Works.....



Wednesday while I was out and about making sales calls, I stopped into a Hispanic store to cruise for supplies. They carry authentic food stuffs from Mexico, with a good selection of items not found at the local grocery store. It is in a decidedly rough neighborhood (missing person from bar two stores down found that day-dead about a mile away by some railroad tracks!) but in mid day, it's pretty safe. I picked up some red jalepeno salsa (La Victoria) which is hot, tasty stuff! I also got a product I had never bought anywhere- a package of homestyle tostadas from Mexico! They were about 20 in a pack, and twice as thick as any I have seen from Ortega or Old El Paso brands. That night, I took fried, seasoned ground sirloin, chopped lettuce, diced fresh tomatos, finely shredded co-jack cheese, micro'd them 'til warm with cheese melted- and we had "wet" tostadas! Then topped with that salsa and we were eating in nothing flat! In an earier post, I covered the local food sensation, the "wet" burrito which we all determined was a dry burrito with melted cheese all over it. Same thing goes here- without melting the cheese over the tostada, it would have been something you've all seen before(I hope!). Melting the cheese helps keep it all together for less fallout of toppings or messy eating! I'm thinkin' about doing a beef brisket this week-end- we'll see.....

Oh, this post rang so many bells for me!

First of all, being a Texan, I know Mexican food. I know good tostadas. And I've gotten to where I never, EVER buy those Americanized mass-produced things. I LOVE authentically made tostadas. Good call!

Second of all, being a Texan, I know beef brisket. If you need some help making it disappear, you just let me know. Remember, we're not that far from each other!

I've actually come up with a rather unique New Year's Day meal that includes beef brisket, hot cheese grits casserole, and of course, black-eyed peas for good luck in the New Year. Quirky, I know, but yuuuuuummmmmmmy!

Now I must go borrow one of my baby's bibs.

Pink- We had enough left over and enjoyed the flavors so much, we had them rolled up in a soft tortilla (added some onions and hot sauce!) for a dry burrito the following night!
tricia- Welcome to the blog! You're talking to a guy who has taken a 3rd and a 4th in the Brisket catagory of the KCBS sanctioned State of Michigan BBQ cook-off! Cooking good brisket is easy- finding someone who even sells that cut of meat in Michigan is hard!

looks good...this is comfort food all the way...I had that for breakfast on sunday except with refried beans and mexican crema (creme fraiche)

Great food post, Buffalo! I've actually tried a couple of your recipes (with slight modifications from lack of an ingredient!) Even with the mod... they're very tasty!

DogB- I like refried beans, wife doesn't= no beans....
in_spired- Living in Texas makes you closer to things I have to look hard for! My chili powders all come from Penderys- in Texas!
Queenie- You're such a trusting soul....And house trained too!
jen- We seem to be in Tex-Mex mode around here lately...
Ake- Try the "Drinking Mans Diet- Six drinks and you forget you're overweight..... :)
Beth- As a kid, there was about two restaurants and one grocery store in this city that had Mexican food. Today, there are at least 10 grocery stores and 35 restaurants where you can go and get Mexican.

Yum...It's early here but I want them for breakfast now! The spicier the better!!!!
I think you should be required to pack this stuff up and ship it to all who read your blog! I mean it's only fair!

DogB- I checked out the web site- not too bad...
Mona- After reading about Chaat, I agree. Street vendors around here are in the form of small trucks that carry a variety of fast food. They pull up and sell at shops and factories at break time and lunch time. They're known as "roach coaches" :)
Ake- I invented the most effective and severe diet ever made! It's the "If It Tastes Good, Spit It Out" diet....
odat- UPS and Fed Ex would "shortstop" it and eat it before it arrived!
Chels- Welcome to the blog and Wolverine Country! Ohio State quarterback when asked if he could pass a football answered "I don't think I could even chew & swallow it.... :)

I have gotten Woobie hooked on Mexican food, but Snickers has yet to get a taste for it. She doesn't like any kind of sauce--not even ketchup or gravy--I swear her taste buds are broken! ;)

And Roach coaches!! Hahaha! That's just funny!!

Snowniece- I didn't eat any other condiment except ketchup until I was about 18! Before 18, I never ate gravy, mustard, sour cream, pickle relish, mayo, etc. Give her time. Remember, just about 1/2 of everything I named can be fattening!
Beth- Sad day at The Big House.. The only thing Manningham caught today was maybe a head cold....
