UFO's You Can Eat!


When I finished the Brie recipe, I was left with three UFO- sized Portobello mushrooms. That's what happens when you shop at Sam's Club! I gave one to my son, along with numerous other food items we overstocked on(He helped me shop that day!), so I had two left for a meal yet to be determined.. I like the darn things. They have an uncanny ability to absorb whatever flavor marinade or seasoning you put on them. They also are dense and firm to a point of an almost meat-like consistency.
I chose to marinade shortly with soy sauce and Worcester sauce, sprinkled with garlic and onion powder. I trimmed the loose sides, and scraped what I call the gills(the dark brown underside of the mushroom)off. I then placed a very thin pattie of ground beef on it, that had been seasoned with salt and pepper only. Broiled until pattie was medium rare, I removed from broiler and topped with a mild cheese. Broiled until melted, out they came... Portobello pattie melt, awaiting your favorite condiment! It could easily made into a sandwich, as you can imagine...

I really, really try to like mushrooms, but I can't. And I will continue to try them, because my love of green beans happened in my 20s. Maybe when I'm 50 I will like them?

I LOVE mushrooms in every which way, but alas me lads all of them only like them raw..

One of my sons took me to Sams in January, because he and his brother shop there every month or 2 for provisions. I guess my restaurant supply house habit taught them well. Anyway, he was a little disappointed that I wasn't impressed with the quantities of stuff there, until I reminded him that my method of shopping is to call the supply house and order, say, a case of chickens, or an entire top round cut as I want it.

No fan of mushrooms here, but it's great that you found a way to use the leftovers happily!

Finn- These could be grilled, or broiled...
Kate- This mushroom takes on any flavor you like, and is firm to the point of tough..try it!
Marmy- This can be eaten raw, but make up a dip or something with it...
Margie-Mushrooms- people seem to love them or hate them...

Portobellos are one of my all-time faves. So versatile. Us vegans love their meaty texture.

Most of them are grown here, in the Philly 'burbs where my husband grew up.

Oh my gosh, these look like cheeseburgers, they're so big! Good idea. Portobellos are always so pricey in the stores here, but I should make them more often! esp now that we can grill!

These are the only types of mushrooms I like. I haven't had a home-made burger in so long and that looks so good! I'm hungry.

And I love what you did with that cheese and apple slices. I bet that was very good!

I do the same thing, only I use pork sausage, cook thoroughly, and no cheese. Yummy.

I have never tried the big mushroom!

The one that you cooked looks worth a bite? Probably more nutritious than the leftover salad and english muffin that I ate for dinner with a pepsi.

The muffin had yummy blackberry jelly!

G-man- the stuffings appear to be numerous! Portos are becoming a flexible option around here!
40- I am the self proclaimed King of leftovers..If you can't use it at least twice- don't buy it!

Mushrooms have never been too favorite with me, but I do like them in certain sauces!

The possiblities are numerous, but the technique is easy and sound!
Snowniece- Look for a store that sells then by weight- overage!
DarnG- Well, he's a good son...
KB- Or soak it as a marinade before you eat it!
Mona- An exaggeration of large! these were 200 centimeters(8") across!
Chef- You see the possiblities of different toppings; meat, seafood, and/or cheeses...
Tavolini- Even more options!

I just read an article about how mushrooms can be 'mistaken' for meat in a lot of recipes. I love them and eat them all the time. I especially like them in soup as they make it taste more like a 'meal'. Thanks for this new recipe!
