The Inevitable Post About Turkey Leftovers..

The white meat and dark meat of the turkey were separated into two containers.. I normally would have boiled bones for stock- but didn't this time, I was too whipped! Monday night was an easy one...it's what we lovingly call a "Truck Driver Special" Sliced dark turkey(you can use beef or pork too!) simmered in leftover gravy, and placed on either toasted slices of bread, or mashed potatoes.. Simple straight-forward, and hearty! Tuesday I made a dish I hadn't in a while- Turkey Tetrazzini! Egg noodles cooked per directions, laid in a casserole dish.. Sauteed sliced mushrooms(in a half a stick of butter!), add sour cream and chopped cooked white meat from turkey. Season with your favorites- I used crushed garlic, minced onion, and Italian seasonings.. Pour over noodles, and cover with a layer of grated Parmesan cheese. Put uncovered casserole into 325F oven, heat through until cheese is bubbly-1/2 hour is plenty- and you have a rich, filling meal, from leftvers!
Tonight will be a chef's salad, utilizing yet more turkey...

You keep eatin' on that turkey and sooner or later you'll know what it's like to live in South Korea...
Oh nooo!!! Rice again for dinner!

G-Man- Someday I'll borrow the knife I gave to my son to keep as a family heirloom and post it- a one of a kind, hand forged, Damascus blade, Ken Mankel made in Cannosburg MI...
JGene- Guess I better not complain!

This sounds fabulous.. though I hate egg noodles so I'd use something else. Is this traditionally chicken (tetrazzini)? You seriously have NO idea how many meal ideas I steal (borrow) from you.

CDB- Cook books have become guidelines, not to be followed to the letter.. I enjoy tweaking and changing recipes- especially with left overs! Brining a turkey makes the leftovers last longer without that "fowl" smell!

A truck driver special? I wonder what a random truck would say if I asked him what a "truck driver special" was? My mind is just in the gutter when I read your blogs. I can't past your screen name.

Here via Chef E's blog. She told me if I didn't come check your blog out, then she would steal my Big Green Egg.

My favorite turkey leftovers definitely include Tetrazzini but also Hot Brown sandwiches and this wild rice soup: http://www.bigoven.com/recipe159672 that my mom used to make. Not claiming she made it up, just don't know where she got it.

Now you always make my mouth water, I think I want you to be my Dad even for just a day LOL.

Maybe you would be eating more turkey the next couple of days? Is this turning into an obsession? LOL.

I'll take two truck driver specials to go. Although I always imagined the term "truck driver special" would have something to do with pedophilia, or at the very least, some lower form of sexual deviancy.

As of last night, I am now a proud gramma for the very first time. I can't wait 2 spoil this 'lil boy rotten., and then hand him back 2 mommy & daddy. Muwhahahaaa.

Hit40- My personality summed up in one word- obtuse...
Chris- Welcome to blog! Those Green Egg Grills produce the best chicken, ever!
Chef- I've had that name and logo so long, I'm mildly surprised when someone comments on it! It is a man who learned to laugh at himself...
HalfC- You'd make a great daughter- I already have a few calling me "Uncle Buff"....
Sully- Ever heard the expression "When traveling, eat where the trucks are parked". I traveled for over 30 yrs., and they know where good eats are..
StarB- Congrats! I wish my boys would someday get married and start families...

That sure sounds uber yummy ( Slurp!)

In India we have a truck drivers' tea. It is called Kilometer tea , and they add spoonfuls of butter to it depending upon how many kilometers they have to travel before they would stop for another tea!

buffalodick said...

I tried hot buttered tea once- sounded better than it tasted!
