Steelhead... Think Of A Rainbow Trout Only Bigger!


Steelhead were successfully planted in the Great Lakes quite a while ago. They are actually a sea going trout, that comes to fresh water rivers and swims upstream to spawn. Michigan found our Great Lakes(fresh water) worked just fine... The flavor of the flesh could be described as a cross between salmon and a lake trout- salmon being best, Lake trout(isn't bad)least flavorful..
At $3.99 a lb. we bought a big fillet and treated it much as I would a salmon fillet.First i rinsed it, then cut into three equal portions. Sprayed with olive oil, sprinkled with lemon pepper, dill weed, and Old Bay seasoning, I broiled it, skin side down for about 12 minutes. Came out as you see in photo.... The brown rice/wild rice mix takes about 45 minutes to cook, with a rest time of 5-10 minutes..
I have a left over portion, which will be made into steelhead spread- but that's another post!

It if tastes like Salmon, I would definetly try it, especially the way you cooked it. It looks and sounds very delicious!!!!

Bina- A bit milder than salmon- fairly firm..
Dana- You got the real deal out there!
Kate- I'd eat fish as often as available at a good price!

Funny Buff...
I have always prefered Lakers. Some folks call them 'greasy'. I call them very moist.
But I will say this, Steelies put up an awesome fight. They are strong, and love to 'Dance on the Water'.
$3.99 a pound? Great Deal!!!

I love fish. We're having plaice tomorrow with parsley sauce, baby new potatoes cooked in their skins and garden peas. Can't wait!

DogB- You're a Sea Dog, and so am I! If I find one I don't like- I'll warn you!
Belle- I love the stuff that crawls on rocks around the sea!
G-man- Lakers can be a bit mushy, depending on size and time of year! Poaching on grill takes care of all those issues- smoking them works great, too!
Ake- Unfamilar with that fish...tell me more!
Jen- Made into a spread- all gone!

I love fish too Buff- grew up fishing, but mostly man made lakes, so I did not get to eat the good stuff like you make until later...fishing season opens Saturday for trout! I ask hubby to buy a boat, so we can have some fun on the water...well the eating kind :)

You have convinced me, fish tomorrow!

Chef- I'm embarassed to admit, I have a little fishing boat that has not made it into the water in 10 yrs.!Kids lost interest, and half of fishing is shootin' the breeze...

I know but that is what makes it a great place to write poetry, drink a beer, and bring some other food to cook on an open fire when you hang around all day...I'll drive up and hook the boat up to my van :)

I LOVE fish to, except I cant be arsed with boney fish :) - Im a lazy fish eater lol..... Salmon is me most favourite but then I aint had the chance to experience many fish.....

Did have wallyeyed fish or whatever it was called in Wisconson about 3 years ago.... it came whole though so I had to cover its little face with me serviette cos it cooked eye kept looking at me...... me doodle maties just blank stared but didnt say a word, just that 'shes lost the plot smile' LOL....

Dam now I want fish, and after all it is friday :).....

Chicago guy living in Cali. I enjoy cooking with the Wild California King Salmon & the Steelhead. Wild Salmon has robust flavor, firm texture and bright color. Is best when cooked in large pieces with skin on. Removing skin is easy after the fish is cooked.

Donna- We used to use buffalo in our competition chili, and my name was Richard.. One night after adult beverages the name and logo came to us! 25 chili trophies, a dozen State BB-Q ribbons- we had to stick with it!

It's so funny.. every time my grocery story has steelhead on display/sale, I HAVE to order it as "the piece that looks like salmon." They don't know the difference; our steelhead offering is the pinkish of salmon. Tastes great!

I have never figured out how to use our broiler function.

CDB- turn broiler setting to broil, turn on. Rack up high or in middle.. use broiling tray that came with oven, cover with aluminium foil. When good and hot, put food on broiler tray- cook until done! Beats grilling in Jan.!!
