Of Brie Cheese And White Chili..



A month or so back, Doggy Bloggy put me on to get a chance at some free cheese... Two of my favorite words are "free" and "cheese"! I sent away for it and received a package of ILE de France brand Brie cheese. Brie is a delightful soft cheese, with a slight mushroomy flavor and scent...
This company was running a recipe contest using ILE de France cheeses... At the coaxing of DogB, I made up a recipe, took a photo of the dish, and sent it in.. To describe what I made really won't take very long, as it isn't complicated to make!
1. 16oz. of ILE de France Brie (room temp), scooped out of outside rind, placed in bowl.
2. Fry (6) thin, lean bacon strips until you can crumble it after cooling.
3. Take one large Portobello mushroom, clean and trim outside edge, then carefully scrape brown underside of mushroom until it is one trimmed clean piece.
4. Mince the mushroom into small bits, saute in rendered bacon fat, until almost dry. Drain and pat dry mushroom pieces.
5. Add the crumbled bacon, minced mushroom to cheese, mixing by hand thoroughly.
6. Place in serving dish, top with freshly chopped chives.
7. Serve with fresh, tart apple slices, or an herb flavored hard bread..

We were in a chili cook-off today- during a rather cold thunderstorm... The awning protected us from the rain, but when the wind gusted, not so well! My wife and I made our white chili, which has never lost at that contest. We didn't win, mainly because they weren't going to let the same team win 3 years in a row- but compliments abounded! It was some of the worst weather I've ever cooked in!

Feel for you, BD, but I am not going to trade your rainy weather for the great, unseasonably warm high 80's we had today in East TN :)

And I feel ya on moving an Egg. That's why I keep my offset and my charcoal grill:)

I hope your weather warms up! Ohio is great! And the buckeyes were looking good in their spring game this weekend. Ready to kick some more Michigan booty this fall :-)

Gosh, now we have 89 degree weather tonight, and its hot in the office up stairs, even my class room this week was warm...

We LOVE Brie and all cheese in this house, your looks LUVERLY, but note you used bacon again lol..... you will have to change all this is ever I get a chance to visit lmfao

Dam now I want chilli for dinner and not the sunday beef roast I have planned.....

DogB- It's OK! I used as a palate clearing bite at the chili cook-off, and it was quite popular!
Snowniece- Hope you're feeling a little more chipper again!
Chris- This was a full blown thuderstorm, that came and went three separate times, each time getting colder...
Darngirl- senitive subject around here- been to store three times lately and forgot to pick up Mayo every time!
Hit40- My beloved Wolverines will be back! Just not this fall....
Chef- I haven't slapped so much as one mosquito yet...
Marmy- As I read once "The French make it, and the Brits eat and drink it"...
Angela- Quite rich, but the Gala apple slices were a good foil and contrast in texture..
Ake- We almmost didn't expect to win, as we had never lost there- it discourages other people from competing, and it is for charity...

PS - I love baked brie w/ apple slices. I can't imagine how good it would taste with mushroom and bacon. OMG!! :)~

Scarlet- Brie with an enhanced mushroom/bacon flavor, and a little contrasting texture...still very rich, not light!
Kate- I don't know if the contest is still on, but the packing and shipping cost them more than the sample!

I also signed up for that cheese...still waiting, but who knows? It could be aging nicely at our burned out (almost fixed) house.
