Whole Roast Chicken And Brown Rice In Chicken Broth..



Two foods that go together in a myriad of combinations is chicken and rice... Roasted, broiled, boiled, fried, etc., chicken always finds a pardner in rice! The rice can be white, brown, wild (which really isn't rice!), steamed, re fried, in a casserole, etc... The pleasure derived from recreating two ingredients that can't miss when together, is a good way to experiment with your cooking!
My chicken carcass( I ought to rephrase that!) is simmering as we speak, to create a broth or a stock that will be the base of chicken soup in the next couple of days... flavored with what you enjoy, this is a worthwhile effort that is easy. Simmer the carcass in the juices rendered, adding water or chicken broth, with your favorite flavors- start with poultry seasoning if you don't know what to do! 2-3 hrs. is plenty... pick the meat off, and add to your soup. Carrots, celery, mushrooms, noodles, rice, onions, are all excellent companions to your chicken soup- go nuts, and see what happens!

that is some juicy lookin' chicken - I would crab a handful of that and slap it between two pieces of white bread and call it a sandwich...

For some years I used to be skeptic towards chicken (after a not so fun salmonella infection caused by it) but after a long while I made friends with it again, and now I use it a lot! Minced, breasts and legs, not so often whole chicken. I love it, and it can be used in so many ways!

I'm going to have to think carefully about coming over to your site Buff. Everytime I do, it makes me peckish and I have to go to the kitchen to get myself a cup of coffee and a snack. It is taking up far too much of my time.
By the way - I love the nutty flavour of brown rice. I think I might go and make myself some..

Bell- Brown rice is our "go to" rice- the nutty flavor, which marries so well with other stronger ingredients can make it a meal in itself..

Recently I have been cooking my beans from scratch with vegetables and I haven't really needed chicken broth to make it taste rich. The celery, tomatoes, carrots and onion have worked miracles..
and and How could you think I would leave my people..I would die die without you all!!! cheers;)

I always keep chicken broth cube for instant cooking!

But we can't think of having chicken right now, as avian flu is going strong in my region! :(

Mona- I use them myself, but not when real broth or stock can be made! The people who have died from "bird flu" is so small against the population of the Earth, we can desregard it! The media can scare you more than life itself....boiling anything can make it safe- and broth is boiled!

So, Unclebuff, Did I tell you I have gotten AWESOME at making rice. I just dump the water and rice in, add the amount of water according to the package and one more part chicken broth and use the LID, do not stir, and it's come out perfect every single time I've made it since. Thank you for the advice! And I shall have more cooking posts up soon. :)

Photonuts- Roasting a good sized piece of meat, is a good way to have a few meals that are less expensive...
Snowniece- I had an automatic rice steamer and gave it away!

what a coincidence. I cooked a chicken and rice casserole today.
Soak the chicken in Italian dressing, cover with dry french onion soup mix, mushroom soup and place all on top of basmati rice.
1hr later, it's all good
