Is It A Side Dish, Or A Meal...
Ever since New Years Eve, the tastes buds and appetites have been a bit off.. Happens every year! I have mentioned before, my wife and son love potatoes. I have also mentioned I took 2nd place in this years State of Michigan BB-Q Potato category, with a twice baked potato. Would you believe I've never made them for my own family? Well, today that all changes! I have some massive Russet potatoes, and all the goodies used to create these for dinner. A side of veggies will go along with the "meal in a skin", and we're calling that enough for a meal! I think I'll include the recipe today, if anyone out there wants to know how easy this is...
1. Four large (1LB.) Russet potatoes, scrubbed, rinsed, sprayed(or rubbed!) with olive oil. Sprinkle with salt and pepper to taste.
2. Bake in oven at 375F for 45 minutes, turn, spray again, and bake for 45 minutes more. I don't stab or wrap them- skins come out better!
3. Fry 6-7 strips of bacon until well done(crumbly)while potatoes baking. Have 8 oz of shredded cheddar cheese ready also.
4. When potatoes are done, cut a thin layer of skin off the top, discard. Carefully scoop out cooked potatoes, placing in bowl for mixing and mashing. This will leave you with 4 hollow skins- to be refilled with potato mixture.
5. Mash potatoes with 4oz. of sour cream, and 4 oz of butter, adding milk if too stiff. Onion and garlic powder to taste.
6. Refill skins with mixture and bake for 10 minutes at 350F
7. Remove from oven, top with cheddar cheese and bacon, which has been crumbled.
8. Bake again until cheese melts, top with sour cream and chives if desired- and serve!
Freezing rain/snow mix going on outside, so no outside activities planned today!

I absolutely adore baked potatoes with any sort of filling. Yours are TOO mouthwatering for my good.
Funny you bring this up because I'm making twice baked for the Eagles game today.

Doc- I the State cook-off I used red skinned- creamier texture..
DogB- These were monsters out of a bag- I didn't even hand pick them at the store!
Jeanne- A dollop of sour cream with chopped chives really dresses them up..
Bacon bacon bacon...I read this post three times and that is all that stuck in my head...sounds like a buff-wiener to me!
I never made these because it sounded like too much work...but it looks good, congrats on the ribbons!

Chef- There was more bacon bits under the cheese!
PhotoN- You bake a potato, cut it in half, scoop it out, mash it with butter and milk salt and pepper, top it with whatever, reheat and serve- short version!
Beth- the skin baked this way is as good as the toppings!
oh my! Tavo would about die for this--he loves potatoes in every which way--but once cheese and bacon are involved, he's a goner. We will probably try and make these, Buffalo :)

Its a little before 8am here and Ive just got toast on for the first nippers but I WANT A JACKET STUFFED SPUD lol....

ps..... you do know a quicker way to do them...... if you zap the spuds in the microwave first for 7 minutes each (if they are big) then you only need to put them in the oven for about 10 minutes on high to crisp the skins.... then continue with the stuffing....
I will admit I LOVE the skins best of all and often swap the innards for the skins with me lads LMFAO

Buff- you and Dog inspire me a lot lately...my brussel sprouts had bacon, and you know how I say hubby does not like the smell or even eats it...he looked in the pan, just as I added the bacon, and said 'what is this'? I quickly threw the onions and oil and said 'brussel sprouts' I am making and left it at that...he so liked that dish...sneaky huh...I am getting my bacon on!
Oh, and my sister does not cook, neither of them do...she orders out the other one eats out of a can or box...
I've never made these before. And my 92 year old grandma who does won't be around forever! I better hop to it.

That looks fantastic, but here's my secret- I fry those potato shells in the bacon grease and THEN fill them up before I put them back in the over. Did someone already say that???
