Before, During, And After Thanksgiving Eats..
This week, I was busy (as I'm sure everyone was!) getting ready for Turkey Day! Tuesday and Wed., was busy making venison jerky for a friend.. A lot of work, but I got venison out of the deal! Wed. & Thurs. were Thanksgiving prep and feast... Menu was straight traditional- turkey, sage sausage stuffing, green bean casserole(oriental!), mashed potatoes, gravy, rolls, cranberry dressing, and pumpkin pie/w whipped cream. Turkey great, stuffing also, potatoes needed tweaking, and green bean casserole was runny( This pissed me off- I used fresh green beans, julienned,steamed, with a host of crisp oriental veggies! I should have known baking them would render more liquid! Live and learn..)Pie was bought, as were the rolls(brought by BIL) and were good! Friday was taking some ground venison, mixed with ground beef(marinated earlier in week!) and making kind of a hickory stick snack(as shown before dehydrating). I sort of burned out on cooking, as does happen...
I came home tonight to find a break-in had occurred! Relax! It was my son and his girlfriend raiding the fridge for leftovers! They had called my wife and got the OK- and I was fine with anyone reducing the amount of food in this house!
Leftovers tonight for us will be turkey croissant sandwiches, and whatever you guys want from that pile of left-overs...

Looks great. I cooked for 11. Nothing like a Thanksgiving meal.
mmmmmm I am loving all the butter on those mashers....and the jerky sticks look really good.....
Doc- I call Thanksgiving "The Forgotten Feast".. We forgot what to eat, and we forgot why we celebrate in the first place.. cheeses a normal man off- and bothers me too...
DogB- Had to Nuke two extra potatoes, as the Buf got carried away with the butter... It ain't easy bein' me...
Everything looks great, its difficult to decide what i would want from that!

I love turkey sandwiches the night of thanksgiving, but after that? forget it....I'm sick of it.
and my kids love deer jerky.
If I were your son I would be breaking in all the time for the food!

Buff its from a little crimbo recipe book called 'The Josceline Dimbleby Christmas Book' that I purchased back in 1987 LOL and has always been me little favourite crimbo cookbook.....
Ive have made this from left over Turkey every year since I got it....
Turkey au gratin with Almonds..
2 lb boneless cooked turkey
1 oz butter
4 oz whole or split blanched almonds
For The Sauce..
2-3 oz butter, plus a little extra
2 heaped tablespoons plain flour
1 1/2 pints milk
1/2 small glass of sherry
6 oz grated cheese
2 large garlic cloves, crushed
1 little parmesan cheese
chopped parsley
salt and black pepper...
Heat the oven to Gas 3 or 170c or 325f. Cut the turkey into pieces and arrange them in a large, fairly shallow ovenproof dish. Melt the 1 oz butter in a frying pan and toss the almonds in it for a minute or two until golden brown. Sprinkle them over the cold turkey.
To make the sauce, melt the butter in a fairly large saucepan, take it OFF the heat and stir in the flour with a wooden spoon. Gradually stir in the mil and bring to the boil, stirring all the time until it is a thick and smooth white sauce. Let it simmer, still stiring, for 2-3 minutes. Then add the sherry, grated cheese, garlic, salt and black papper and stir until the cheese has melted.
Pour the sauce over the turkey and almonds. Dot with butter and sprinkle with parmesan (we also use strong stilton). Cook in the centre of the oven for 30-45 minutes until golden brown. Before serving sprinkle with chopped parsley....
There ya go..... quick and easy and just the most delicious thing to do with left over turkey.......

Sounds like your thanksgiving was fabulous too!! I had to laugh at your last post, because eating late doesn't agree with me either. ;) And I had the same thing happen with my green bean casserole one year--I thought I was being all impressive and clever and man did I get mine. I will never use the fresh green beans again. :S
I really need to put us all on a flight to Michigan so your wife can play with my chilis for Christmas this year! I think they would all have a blast!!

Buff- My turkey was also brined...take a bit of jerkey for me, I like mine soaked in Tabasco while it is drying out! I agree with some of the others, you would have to put a lock on the fridge if I were around... :)
Chef- I just knew you brined! Too good of a cook not to! Jerky came out good, sausage stick tastes good, but is butt ugly.. needed dry milk to bind it- and didn't have any in the house...
But ugly still can taste good!

Wow that Turkey looks so tender and juicy! I can't even begin to tell you how much I love Turkey, Cranberry Sauce and stuffing. I put a little of all three on the fork together and shove it in my mouth. I don't care about anything else, I just want those three things!!!!! And leftovers? Oh yea, I can eat them for days. You know, turkey fried in butter, stuffing made into patties and fried. YUMMY!!!!!!!!
