Easter Dinner- The Planning Begins!

I look forward to preparing something special on Holidays, even though with my folks gone and my children grown and living on their own, they aren't the feasts we used to have. I asked my youngest son what he'd like on Easter; Prime rib, roast turkey, or leg of lamb. He wanted lamb! While I was at the store looking the lamb over, I noticed they had thick lamb chops(the ones that look like mini T-bone steaks!)Loin chops I believe they're called. These cuts, in my Simon & Garfunkel marinate( Parsley,sage,rosemary & thyme, garlic, salt, pepper,fresh lemon juice and olive oil!) then grilled quickly over glowing charcoal, are delectable. For those of you that have never had lamb, or had it once and didn't like it-please try this cut of meat and cooking method. Fresh asparagus, garlic mashed Yukon Gold potatoes, fresh homemade bread, and a lemony dessert yet to be determined should fill the bill. Blog back your Easter plans-I'd like to hear them!

this sounds spectacular! i love lamb. i don't know what i'll be eating at easter dinner yet. i'm going over to matt's parents so it'll be a delicious polish easter brunch.

It's just me and my husband so I don't know what we are going to do for Easter. Saturday is my sister's birthday so we probably will do something in memory of her too.

The Easter Dinner Discussion of 2007 is still in session with my family. I am the lone holdout for lamb, so I suspect we will be having a pork roast....

Pink- Good Kielbasa, perogis, golobkis, kapuska,etc....
DogB-I'm pretty sure you could eat 3 or more of the little teasures!
Lynda- Try and enjoy as best you can.
Michelle Ann- I was the lone advocate of lamb in my family, until I won them over with the cut and cooking method I listed!Make both-you deserve it!

i've always hated lamb even when i ate meat. it's so mealy. hence the gobs of mint jelly.

Tanya K- Bad Tanya!It's not "mealy" if prepared well, and you never use mint jelly on anything except maybe chocolate toast(which I've never even heard of!).

I love lamb too, haven't had it in a while though. My easter plans are to go over to a friend's for lunch-dinner, which will be cooked by a common friend of ours. I plan to take dessert, because as of Sunday, I can!
