Leftovers-We All Got 'Em, What'll We Do With 'Em?

As I have explained earlier, the weather here has made mundane(or fun!) tasks difficult to the point of "screw it". Sundays, I usually grocery shop. My wife was gone for the week-end, and I didn't feel that ambitious so I checked my supplies for ingredients to make a dinner. I decided chicken,mushroom noodle casserrole on a cold, snowy day would be good. Simmered chicken, got out stuff for sauce-then I realized I had no egg noodles, just Italian type pastas. Had to abort plan, but what to do with 2-1/2lbs of cooked chicken breasts? Made a quick switch to chicken spaghetti-chunks of tender white meat in a sauce of chix broth,tomato base pasta sauce and mushrooms, served over the pasta. Good stuff, but a ton left over! Last night, took remaining sauce and made a chicken, mushroom,pepperoni pizza! Lots of Provolone, Parmasan,Mozzarella & Romano grated or shredded to tie it together.
Anytime we can do "Leftover Control" we always feel like forward progress was accomplished!

Even if we cook in somewhat manageable portions, the leftovers eventually mold unless i man up and take them to work as lunch. Pathetic

most of the time i don't have manageable portions because i'm usually cooking for myself or for just two people! even when i halve recipes and such. so i always have lefovers. and i just eat them as is.

sornie- Some leftovers are quite good for a lunch sandwich; Prime rib,ham,chicken,turkey,etc. You just don't want it all week long!
Pink-With your imagination, you eat them as is?Amazing...

Tanya K- Wasn't too bad, thin crust,sauce a little bland,but I have had worse(Dominos',Little Ceasars,etc.)...

I love leftovers too. It makes one you feel so resourceful.

You can make fried rice out of anything! Meatloaf fried rice, chicken pasta sauce fried rice...

That is so true! There's something about recycling food that makes us feel accomplished!

The cool thing is that you have the ingredients around the house to be able to switch up last minute and make a pizza!
It's rare that I do.

If there are leftovers, my husband usually eats them. I am not a leftovers gal. Especially meats.

Eve- When I cook, I don't measure-I adjust to taste. This results in some big batches of stuff! I don't want to eat the same thing again, so I fiddle with it until it's a different meal!
DogB-I had a little chicken sauce left, mixed it w/a can of tomato soup,added basil,a can of diced tomatoes,a little Philly cream cheese and it was a really good cream of tomato/chicken soup!
Jen- Once I was in a cooking contest where you gave them the recipe and they supplied the ingredients. Everybodys' stuff was on a central rack, and when I went to get supplies-things were missing. I managed with what I had and still placed 3rd!
Kayla- I am a borderline hoarder! I have never gone thru an "Express Lane" at the grocery store in my life!
Lynda- Nobody often makes leftovers on purpose,but you can't just throw them out!

I always wrap up the leftovers and end up just throwing them out! lol Its just the cycle of my life. If I would a. cook accurate portions or b. accept that I am going to throw away the stuff ultimately anyway... I probably would save a lot on cling wrap! lol
