Chicken with Yukon Golds, And A White Pizza




By Friday, the pain medication was starting to work(a little!) and it was time to bake some chicken and roast some potatoes... Marinated chicken- thighs and bone-in breasts, in a champagne vinegar, olive oil, white pepper, and poultry seasoning for a couple of hours. Baked at 330F for 1-1/2 hrs. the skin was crispy, the chicken was tender and moist! The potatoes were smallish Yukon Golds, perfect for the same temp and time as the chicken. I used olive oil as a coating, then salted and peppered the skin. Came out creamy, with skin just starting to wrinkle! Plenty of left over chicken...
Saturday, I was feeling a little more like something different to eat, and thought the pizza I missed Friday would be tasty tonight! Home made crust, as always- but decided an Alfredo sauce based pizza sounded good! That sauce, along with Parmesan cheese, Mozzarella cheese, chopped onion,pepperoni, and chopped cooked chicken made for a really great taste mix! Ran some up to my son, who was working, and he called to rave about too..
Today's meal is undecided, but my sister-in-law gave us some home grown raspberries, which will be a dessert very soon!

Yummmmmmm. YOU know how to make a pizza! I tried home-making one. I don't think I did very well...now every time I mention pizza my boyfriend says let's just go out and get one!

Steph- I've been making my own crusts so long, I don't even have to follow a recipe! Most baking for me is not that easy!

I really like this. Like the "one pan" meal. The marinade sounds really good. I've got some champagne vinegar in the fridge just dying to jump on some chicken. Will try this soon.

LeaAnn- I discovered this kind of vinegar years ago and love it! Not as"vinegary" as some, you really can tell what grape was used to make it.

otin- I mix it up, but today it will be a chicken spaghetti in a red sauce.. Got some fresh basil ready to be picked, which should help it along..

Lilu- I have come to enjoy it more than I used to.. Took a class on pizza making.. woman in class wearing the shortest skirt made white pizza... Subliminal influence is all I can use to explain this!
DogB- Champagne vinegar in the soak tenderizes and flavors beautifully. cooking it longer and lower is becoming my preferred method for oven roasting!

I had a pizza (decidedly UNhomemade) last week that did not have sauce at all, but a garlic oil layer under the cheese. I thought it would be just like cheesy garlic bread or something, but it wasn't and sadly - I ate the whole thing all by myself.

ohn- Sometimes love hurts, other times it's great fun to point and laugh.. it helps! I don't know- feel me up for a while and see how it goes! I can't quit kiddin' around! Hope you have fun at all times in your life!

You have made me without a doubt very hungry. And if you don't already know it I have already given myself the title of Pizza Princess so I love the description of your pizza and I am sure it tasted awesome. My 55 is up hope you are having a terrific weekend.

Raspberry tarts and muffins would be first rate. That is, if you can stop yourself from eating them all before you use them.

I'll probably be suckered into making pizza again soon, but it's a lot of work when you feed the army I have around here!

Pam- Welcome! I have never had that leap of faith and used a yeast dough that has been frozen- does that work pretty good?
Jadey- Welcome! We just call mine "A Dad Pizza", which means all from scratch!
Marjie- I knew they were home grown and fresh- I found a dead fly in them!

Gee, I am AWOL for a few days and I come to see you and you go and have a root canal.. hope you are well on the mend. They are not fun Im sure. I think that is one time pain does not equate with pleasure, well that and childbirth.

Chris- finished up the chicken in chicken spaghetti concoction that hit the spot- three very different meals from 2 packs of chicken!
Donna- I leave in a 1/2 hour for the actual root canal surgery- Thursday was prep and a temp filling..

Buff you are one amazing man! I can imagine the pain you've been experiencey and to that you've made pizza and chicken and so on...you rock!

I love making pizza at home! This one looks fab! I'm trying to grow the balls to ask the pizzeria I go to for their dough. I know it's not a big deal, but sometimes I build it up in my mind that it is.

Kris- NYC pizza has a reputation about the water used in the local pizzas- which makes your city pizza kings! I've had plenty of Chicago style, and I like your city's version better! Photo bears a remarkable resemblance to my wife when younger, I bet you're as nice as she is too!

I have not had a root canal I have heard how awful the procedure is to endure. I am flabbergasted that you are on solid food already. I would be living on chocolate milkshakes.

Hoard the good pain pills for other special occasions!!

I remember the first time I had BBQ chicken pizza in the mid-west for the first time, it was mind blowing, and now preferred...yours sound like something I have to try!

Rachel- I like it too! Not my most favorite, but a wonderful change, a few times a year!
ChefE- Easy-peasey! Just keep the sauce Alfredo-like, and add what makes sense to your taste buds!
