Sunday- Meatloaf, Monday- Roast Leg Of Lamb, And Cheescake!



We actually like meatloaf. I make one flavored heavily with herbs, spices, ground beef and ground, seasoned pork sausage. Thought I had a photo, but we all know what a good meatloaf looks like! I mention it, only because my next post will the leftover meatloaf turned into a much interpreted dish called Shepherd's Pie..
Our holiday meal consisted of a whole leg of lamb, roasted, Yukon Gold potatoes, asparagus(eat it while it's the local, fresh stuff!) soft rolls, and a traditional cheesecake.
The lamb was stripped of the fell, or membrane, and coated with a wet rub made of olive oil, garlic, rosemary, balsamic vinegar, salt, black pepper, and celery seed. A dash of water was used to make it a paste. Roasted for 2 hrs+, it was a little past medium rare, but still fairly moist. These left overs would be used in a traditional Shepherd's Pie, but I'll be making lamb stew with this!
The cheesecake was a plain, NYC style cheesecake, topped with cherries- really another keeper( no cracks!). Plenty left over, as it was a big one!

The only thing I add to my lamb seasonings is mint. Otherwise, I'd say you've been peering into my kitchen! I'll take that cheesecake any day - hold the topping, please. It would last about 20 minutes in my household.

I am with the hold the topping crowd but I will take a little dollop on the side - how can you have leftover lamb I can eat half of that by myself?

Marjie- dried or fresh mint is indeed a good match-up- mint jelly should be outlawed!
DogB- My kid must have ate a pound of it, not counting the other stuff! He loves lamb...

Shepherds pie is okay, but it is dang hard to beat a good meatloaf sandwich the day after, ya know?

My favourite kind of cheesecake is the baked kind [which I think is NY style] I'm also very fond of meatloaf, heavily spiced but we stuck to the 'traditional' barbeque for the weekend. Yum.

I have never cooked anything (other than turkey) for over an hour. This lamb sounds delicious...and the leftovers in Shepherd's Pie sounds even better. Do you have a good recipe for good old Shepherd's Pie?

You MUST have all sorts of unexpected local 'guests' after posting such as this.. I'd love to sample the leftovers. But I must say, I got over lamb after eating it non-stop in South Africa for 10 days, two years ago. ugh.

I Love roast lamb leg! Next time You make one , try using raw papaya paste in the marinade. (I saw it is available in the Indian stores here)It will really enhance the taste !

CHEESE CAKE!!!!

Well...I have got a tub full of Baskin and Robbin cheese cake ice cream in the freezer...

but in a dilemma...if I should be eating it or not...You know what those things can do to you :(

Maddy- My cheesecakes are all baked- no gelatin for me!
Scarlet- I used the leftover meatloaf as a base, poured brown gravy over it, covered that with sauteed onions and mushrooms. Next layer was the corn, covered with mashed potatoes, and baked for about an hour until potatoes started to brown.. 325F temp.
Dana- No topping or any topping works with a basic cheesecake like this!
Jen- Enough for a couple more guests, easy!
G-man- Me too! My kid couldn't quit eating it!
CDB- I wouldn't want it every day, but a few times a year is great!
Donna- I could use some help- I'd put you to work!
Darngirl- I've been doing the Holiday dinners for my family forever!
Kate- Try it! Best to start with thick lamb loins, over charcoal- medium rare!
Marmy- 7lb. leg of lamb, and a four lb. cheesecake- plenty left...

Yours looks much better than hers. I have to admit, I have never made lamb myself. I'm not sure why???
