Kind Of A Funky Friday Nite Supper



We've been eating a lot of pork lately, but haven't had pork chops in quite a while. I looked for a baked recipe, and came up with this...
1. 4 pork chops, bone in, browned in olive oil. Place in dish, large enough to hold them.
2. Top with sliced apples, and onion slices.
3. Pour a mixture of strong mustard, brown sugar, and a touch of water to make a sauce.
4. Pour over chops, apples and onions.
5. Bake at 350F for 50 minutes, occasionally basting with rendered juices/sauce.
It wasn't bad, but next time I'd leave it right in the fry pan and cover tightly!

That's a change up from pizza night!!! ;) I've got some porkchops to find something to do with tomorrow too... interesting... apples and onions don't seem like they would go together, but you're the chef. :D

Oh--ps. my pork chops are boneless--do I need to reduce the cook time?

Snow- Not really, same cook time should work...
Ake- The mustard comes through very lightly...

My wife would love this as she loves fried apples. Why would you go stove top next time, just for convenience, for moisture retention, or some other reason? Just curious.

Chris- transferring it to a dish and baking it seemed to have no advantage over just making it in a covered fry pan on a low simmer- less mess & clean-up!

Donna- I actually am not a big fan of pork chops- I prefer a simply pan fried thin cut pork steak. Stuffed pork chops- they're OK!

Marmy- If I ever met a woman who needed pork- You...well, I just won't say it- as I pass for a gentleman in the Colonies... :) The word "incorrigible" has been used decribing me..

I agree with MarmiteToasty.... you must have gotten hungry for pork from all the swine flu BS.

The recipe looks excellent. I am making it this week! STILL NO OVEN!!! This is perfect. I'll take a pic of it with Fluffy and the kitties.

I would prefer the apples on the side too - did the pork come out pinkish inside or was it over cooked - 50 minutes is a long time.

K- I normally don't cook meat with fruit, but pork and apples have been together a long time..
Hef- I didn't eat them, just used them for flavor and pectin tenderizer..
DogB- Too thin to hit pink...

Pork chops do have a tendency to dry out. I always serve pork with fried apples, baked apples, applesauce...

I'm a big fan of leaving it in the pan, and it looks like this'll work that way as well. Fifty min. sounds like a long time after the chops have been browned already. Is that right, even for stovetop?

Scarlet-Simmered low in covered pan, it only gets more tender..Mango sauce? My lovely woman, you would know more than me about that, but it sounds perfect!

Scarlet- The mango has the same ability as an apple to tenderize- probably more so!

Apples sounds fascinating, I've grilled chops with pineapples. Sounds like you cooked them a really long time.

I love pork chops, especially in the pan...nice and brown!! That recipe sounds great...I may try it as soon as I get my kitchen back!

K.A.- Two ways to cook tightly grained meat- very short, or very long...in between is where it will be tough.
Odat- When we redid our kitchen, I "winged" it for almost 6 months!It was worth it!

If I could chime in here - papaya is the key ingredient in most powdered meat tenderizers - its listed as papain - as for mango it would have the same tenderizing effect as any other acid -

DogB- Correct! Not as powerful as a vinegar, but tenderizes and flavors to a nice degree...

You guys are in sync :) I have not made pork in a while, not sure why, but this sounds like something I should try, since hubby like his apples and chops!

I like that plate you are using, any particular brand? Hubby has a thing for black and grey...pretty!

Chef- Pfalzgraff, "Night Surf" out of production now, but I bought a a 4 place to supplement my 8 place, in case of breakage!
