Sunday Dinner, After A Spam Cook-off...



Yesterday, I participated in a Spam cook-off. The turn out was pretty good, with about 12- 14 teams entered. I had never been to one, so it was a bit of a learning experience! I was by myself, as my cooking pardner had to work. Reheating my entry was a problem, but got through it! Some of the entries were, Spam pizza, Spam Lasagna, Bean-n-Spam soup, My Scotch Eggs, Spam meatballs, curried Spam, Spam Kabobs, etc. I tried a few, but honestly- there is only so much you can do with this stuff! The Lasagna won, but the pizza was my favorite. My eggs all got gone, but I was about 6th or so... My stomach is still upset! Later that night, we played poker with 3 other couples, while I bitched about an upset tummy....
I did feel a little better this morning, but decided a simple meal might be better than going all out. Roast chicken breast, steamed asparagus, and home-made banana bread was plenty for today! Still, didn't eat with too much excitement... Hope you all had a good week-end, and are ready for Monday!

I thought about you while I was at the market and walked by (didn't buy) the Lighthouse Sugar Cookies!

Spring brings wonderful asparagus - another reason I am fond of the season!

Did you know, that in Hawaii, Spam is king! They even have songs about it!

Man, I haven't had spam in God knows how long, but my kids and ex husband's fav is Spam and eggs! We chunk it up and mix and cook it with scrambled eggs. YUMMY!

But love the chicken. I would much rather have that.

DogB- It's starting to show up- we eat alot of it when in season...
odat- I didn't try alot of the stuff, I just think I got a bad chunk of it somewhere...
rog- Probably be the only way I'll ever have it again!
bina- Even into Monday, I was not interested in eating!
leighann- Last night, we had chicken and cheese Quesadillas- I bet you would have liked them!

My gmail gives me a spam recipe every time I go to my spam filter, but honestly, I have never tried the stuff!

lynda- You are not missing much, but for $2.00 you can always try....
OffendedB- Be careful out there! Remember, the only thing in asparagus- is asparagus! Spam- read the label, check the expiration date...
Michelle- If it isn't, it ought to be....(Good one, girl!)
