Sort Of A Chicken Cacciatori Over Rice...


Tuesday was a busy day time-wise, so I threw some boneless skinless chix thighs into the crock-pot on a platform of onion, covered in red bell pepper, seasonings, red pasta sauce, and Parmesan... Went about 6 hrs. in slow cooker. Cooked up some white rice, and served as seen. Not too bad! Wife is taking some night classes, so we had a window of about 15 minutes to eat!
Today for me was a challenge.. 6 phone calls to 4 people to get one piece of steel priced correctly and delivered on time.. I am glad age has brought me some patience, because this would have sent me ballistic 20 yrs. ago...When I had fixed everything, and all had gotten back on track- I told the new kid (who had screwed up!) in the office to call the customer with the good news that all was well. I'm not much into glory anymore, and I wanted him to learn what feels like to get a little credit for a job well done. Pats on the back are getting rarer everyday!

Damn. Every time I see food pictured it looks so much better than my standard meals. I feel like I am cheating myself.

sornie- Half the fun I have with cooking, is creating the challenge! What have I got in the house? How much time? etc...
dana- This wasn't too bad- on the lighter side, and actually pretty cheap to make!
roger- I use a crock pot quite often, when I know I can't dink around with fixing dinner some nights..
casdok- Thanks, but I really would like to see some our younger people get more excited about their jobs- and I think a good way is to encourage, rather than critize!
odat- He's a good kid.. Remember when you were young and trying to learn? Teachers that teach, rather than hang on to their jobs should be paid more!

I can't imagine that pats of your back would be rare. If I had you to cook my meals for me, your back would be sore from all the patting it would get.

Sounds delicious, pats on the back for you. I cooked monk fish for the first time today, with prawns and tomatoes and black olives, not forgetting the wine, I served it on a bed of tonnarelli al nero. Him indoors and my mum seemed to enjoy it.

beth- First storm this year that did miss us!
tanya- Secret to crock-pot cooking is to either wrap the stuff in aluminum foil, or cook it on the minimum time, up and out of the liquid on a stand of something!
annie- How kind you are! I'm as guilty as the next person sometimes- taking people and their efforts for granted...
queenie- Monkfish- we call it poor mans' lobster over here- wonderful, rich flavor!

mona- Thanks for the E-mail, it explained much... a slow cooker is a very low temp/low power way to cook when you have other things to do at the same time!

Aww, UncleBuff, that was so sweet of you to help a boy out like that. We all screw up every now and then, and I hope he was appreciative of you saving his ass. ;) I know I am when someone does that for me.

I haven't had chicken cacciatori since I was a kid...mmm...

I can see by scrolling through the past week of your postings, I have missed some great meals! We've been busy also and haven't even had time to work up a post about our visit with the grandchildren!

I love visiting your blog...it always inspires me to do better in the kitchen. Funny thing, though, I have to keep coming back, time after time, to be re-inspired! lol

sherry- nothing special, just use your favorite out of a jar red pasta sauce- but use good, fresh grated Romano, and Parmesan as topping cheese!
Snowniece- If I was an Indian back in the 1800s', I would be teaching the advanced class of reading Buffalo sh*t to see which way they were heading! :)
Ake- If we don't, who will? Values are more important that knowledge..
in_spired- Joy is a difficult emotion to explain... but wonderful to experience!

lini- Our next generation of workers have it tough enough. Not knowing something isn't a sin, but not teaching something is...
pink- I agree, but in our go-go-go-world, who hasn't had to eat on the run once in awhile?
