An Out Of Town Friend And A Dinner For Him...



Yesterday, my kid calls and tells me Koob is in town. This is a guy who grew up as one of my youngest sons' best friends. He asks if it's OK to bring him over Thursday night for dinner. After this kids' Dad died-just before he went over to Iraq as a Marine, and I kinda would help him with Dad-like wisdom once in awhile. I had a big day of presentations with corporate people, and my wife works tax season, so we would have to put something together the night before! I made my patented 6lb. lasagna with ground beef, Italian sausage, mushrooms, and 4 kinds of Italian cheeses. This is when my kid calls and asks if his buddys' girlfriend can come to dinner too. Sure, plenty of food! I tell him what we're having, and he says he thinks she's lactose intolerant! Goddamitt... I tee off on him, and he says he'll check... Turns out cheese is OK but not milk. My wife made Koobs' favorite treat from when he was a little kid- peanut butter chocolate Rice Krispie squares! Garlic bread should round out a decent meal!

Cooking for a lactose intolerant person wasn't the crossroads you were preparing for, was it? Surely not.

I loves me some good lasagne!

I remember as a kid about the only thing people were allergic to was maybe walnuts. Now people are allergic or intollerent to damn near everything. What gives?

we LOVE lasagne in this house but I tend to make it with cooked garlic chicken :)

You should of given the girlfriend a lettuce lol

and those rice krispy squares are to die for :)

annie- Nope! She enjoyed the lasagne- real nice girl!
jeff- I'm with you. I think they're better at finding allergies than thaey used to be...
marmy- I make a chicken and Canadian bacon lasagne that the local press once featured my recipe!
dana- It was a great visit! They snarfed the lasagna, the rice krispie squares, and took home everything they didn't eat!

I love lasagne. My boys were always bringing someone home for dinnner. One of their friends spent more time here than he did at home. Thankfully none of them were intolerant to anything - they'd eat anything!

Okay, patented lasagna, does that mean I have to pay you for the recipe, cause it is my FAVORITE food. I don't think mine weighs 6 lbs, and I only use 3 cheese, and hubby hates mushrooms. He always asks me why anyone in their right mind would eat fungus. But me??? Hey, I'll pay you!

Buffalo, is that yellow cake with chocolate frosting???? My friends and I would make that kind of cake all the time and enjoy with a big glass of milk. YUM!

casdok- Mozzarella, Parmesan, Provolone, and Romano! My sons' friends would sometimes eat here and they weren't even with him! We're kinda that way...
bina- dear, it's was just a way of saying the one I like best!Use box instructions for cooking 9 noodles and assembly, Cut out the mushrooms, add onions, but 1lb. of ground chuck, and 1lb of Italian sausage, use the four cheeses I listed with casdok(along with 12oz. of Ricotta!), and your favorite version of red pasta sauce
cover and cook for 40 min at 350F, uncover and cook for 15 minutes more, let rest for 5-10 min. and go for it! I make my own sauce, but that's a whole post in itself!

Sherry- If you're ever up in West Michigan...
Michelle- No, Here's the recipe:
1 cup Karo syrup (white)
1 cup sugar (white)
7-8 cups of Rice Krispies
1/2 cup of smooth peanut butter
Heat all in pan until peanut butter is melted and mix thoroughly..
Butter 9" x 13" pan, press in above, until an even, solid layer
Melt 12oz choco chips with 2 tbsp of butter in Micro or in pan, spread on top of rice krispie mix.
Refridgerate for an hour- cut and serve!

If that's what you "throw together" when you're busy, what the heck to you do when you're not?????
Sounds delish!!! I love lasagna, but I just think it takes too much time...however...I did discover that you really don't have to cook the noodles...just make it up with all the ingredients...let it sit in the fridge for a couple of hours (that way the juices penetrate the noodles) and bake it...Ouila!

Ok, the lasagna sounds perfect, and then PeanutButter Rice Krispie Squares with CHOCOLATE on top!? Did they all ask you if they could stay for a few more days after that meal? I sure would have...

buffalo invites everyone but me cause he knows I am the only one that will 'probably' show up...

I cant eat six pounds of lasagna but I can definitely eat a pound.

I had a vegetarian girlfriend in college and my mom always offered her tuna...LOL

beth- Me too! Karo syrup and peanut butter is easier than melting marshmellows!
andie- 2lb. meat, 2lbs. cheese, 1lb noodles, 1 lb sauce= 6lbs.!

Im making the rice krispie squares in about 10 minutes but making them with chocolate coco pops :).... yum..... oh sod the calories its Easter :)..... see what a great excuse easter can be for the non 'god doers' :)
