Two Suppers, And The Start Of A Treat...




Thursday night, I'm still preferring cold food opposed to "rib- sticking" food, so I made a Chef salad. Wife was going to get home late, so I precut and arranged all the topping you could choose from(cheese missing from photo!) I like to plate the lettuce, put dressing on the lettuce(Lord knows lettuce needs it!), then pile on the toppings- which don't need much flavor help! It hit the spot, with enough stuff left to make another salad for my wife's lunch...
This morning, I decided to tackle a task I planned on doing about Wednesday... You wonder why a man would cut tough meat, with the grain, mind you into seemingly useless strips? Dog knows. So does G-man. It was time to make a batch of Buffalo Dick's Beef Jerky! The marinate was made, I'll share a few ingredients: Worcester sauce, soy sauce, water, brown sugar, black pepper, garlic, onion powder, Montreal Steak seasoning,sea salt, hot sauce, and liquid smoke! Soaking 24hrs. refrigerated should do the trick. I'll use the dehydrator for a more consistent shape and doneness. It never lasts, my son hides it from his own girlfriend!
Tonight it is an Italian flavored stuffed pepper. The photo doesn't show the cheese I'll melt on the tops 10 minutes from finishing them. Italian sausage instead of hamburger, onions, celery, and pasta sauce with the rice... well, time to put them in the oven.. Everyone enjoy your weekends!

This looks perfect for a summer evening. The marinated beef just puts this way over the top.

I love making stuffed peppers. Usually during the winter- but we love them just the same.

I love how tidy you cook - the salad ingredients all organized in a caddy. Nice!!

The peppers look fabulous. Yummy!! If you lived closer, I would bring over dessert.

People around here make jerky all the time. Usually from deer meat. I have developed a taste for it, but have no desire to make it myself. Thank goodness for all the hunters!

Katherine- the salad was right for the night!
VodkaM- I've just really have tried to eat a little healthier since my stay at Fortress Spectrum(the hospital!)
Hit40- Normally not that organized, but I had time...Peppers were good, but I like a little more zing, which until my tummy heals a bit, will be missing!
Kate- I've made jerky for many years and it's a great way to make new friends!
Ake- I never was normal, maybe this is what it's like!Cooking after a lay off is enjoyable again..
DogB- Dehydrator goes on in about an hour...

meg just informed me she like stuffed peppers. she must have had it at her dad's. so that is on our menu for next week. glad your're feeling better!

I would love to try the beef jerky as I've never had it ANYWHERE. The way you cook, I'd try your recommendation before anyone else's.

Two summers ago, my daughter brought 2 friends from Wyoming home with her. They brought me antelope jerky made by one of their fathers. I loved it, and so did everyone else in the house. The girls were astonished by the number of cars here. And a little frightened too, I think, by the traffic. I had to haul one of them in out of the rain because she was standing out there looking up at the sky in amazement and I thought she might drown.

Scarlet- What a nice thing to say! I just bagged up the batch, and it was pretty tasty...
Marjie- The Dublin Store(middle of nowhere ,MI!) has beef, turkey, buffalo, venison, etc. kinds of jerky in different flavors! They ship world wide, and I bet they have a web site! I usually make beef or venison, and shoot for a sweet/salty/spicy balance..
Once on the old railroad ferry run from Ludington to Manitowoc, I was standing with a rancher from Montana by the rail in about the middle of Lake Michigan. He kept saying "This is all fresh water?"

Bad news about your boy being such a snarfer with the jerky, because I'm thinking that's something that would travel via post to Ohio very nicely!

Jeanne- He was over for Father's Day, and ran out the door to get back to work, forgetting his pack of jerky!
Chris- I've been making jerky for over 12 years, and finally now get a consistent flavor and texture!

Gene- 1 Hour cutting and trimming meat, 24hr. marinade in flavor brine, 5hrs in dehydrator, 15 minutes to package- done!
G-man- I was happier with the jerky, but the peppers were OK.. Doc wants me to layoff on the super spicy stuff for a bit(Shit!)
