Misshapen Deliciousness... Beef Jerky!
Saturday and Sunday were putz around food days... I had an Eye of Round beef roast, and the only reason I would buy this cut of clear, tough, kind-of-flavorless meat, would be to turn it into a tougher, far more flavorful product known as- Beef Jerky! This time of year in Michigan, thoughts turn to the great outdoors... Much like our ancestors, we pack a little traveling food to eat on the trail(or a bar!). Over the years, I've come up with a pretty good working knowledge of making jerky and sausage for the times we wear flannel, and pretend we're hunters!
I marinate the trimmed, cut-into-strips beef, in a water, brown sugar, non-iodized salt, onion, garlic, Worcester sauce, red pepper flakes, liquid smoke, celery seed brine (try saying that in one breath!). 24 hours later, I dry it and place on racks in my dehydrator.. about 4-5 hours later, we got product! 4lbs. of fresh meat will yield 2lbs. of jerky. Around here, beef jerky sells for $15 a lb.... I make superior jerky for about $5 a lb.! People ask what is the shelf life of this stuff. I tell them I don't know, it never lasted longer than a week before it was all gone!

I and me lads tried this stuff 3 years ago when we was in Wiscontance... I thought it was like chewing on an old dried up piece of skingraft that someone had dropped on the floor LOL.... Sam loved it and Jacob said it was like chewing on a leather belt LOL.... we bought some back for me other 2 lads to try and they LOVED it.... bloody jerkie jerks.....

your 'sauce' sounds great...why non iodized salt though?

Beef Jerky brings back memories. My dad used to bring me home big pepper strips from the local bar he frequented. I loved those things!
Love that stuff...but have to watch the sodium content...gots me some HP problems. :(
Anyway,just discovered some jalapeno jerky which I just LOVE!!!

Before I came to your blog I always thought that the people of America used only salt & pepper in their food!

Michelle- This batch hit all the notes I like: Not too salty, not too sweet, plenty of heat and flavor!
lulda- When you make your own, you can really control what is in it!
Mona- I'll go take a look on Limes blog... America, more of a melting pot of cultures than most of the world, has been exposed to so many different foods and spices, almost any flavor you have ever heard of can be obtained!
Eye of Round is indeed the perfect Jerky cut in my opinion.

My boys just LOVE jerkey! Beef and dear both. Me? I have to work too hard to eat it but I do like the taste.
This is the second time in a week I've heard about "brine" and before this, I have never heard it before. EVER! Someone had mentioning brining a turkey. Do you do that?

bina- I preach the sermon of brine for turkey every Thanksgiving! It works, I've proven it, and it's easy!
