Another Casserole From The Great Midwest- ChiliMac!
Or at least, one of many versions! I had a little leftover ground beef... (does anyone pickup on how many dishes I prepare that start with the word "leftover"?)! With the weather being cooler, a combo of macaroni, seasoned ground beef, chopped celery, chopped onion, a can of diced tomatoes, V-8 juice, chili powder, salt, pepper,and cheese- I could create a flavorful supper for an overcast Fall day! Browned the beef, with onions and celery- all seasoned, then added diced tomatoes undrained, and the dry macaroni pasta. Simmered for about 12 minutes, added Nerd cheese(American processed-melts like mad!- and don't pretend you don't use this stuff either..) some salsa right out of the jar, and poured into casserole dish. I topped it with cheddar cheese, Romano, and Parmesan, then baked in oven for 20 minutes until cheese toppings were bubbling.. Hope you like it, because it tasted great! Oh yeah, that brownie looking thing is a little from scratch creation of mine, featuring brown sugar, dried cranberries, creamery butter, sliced almonds, semi sweet chocolate chips- tied together with flour,eggs, baking soda, salt, water.. you know, brownie stuff! Next post will be my 300th! Probably a Mini-meme...

that pie cake thing is similar to a holiday pastry I had as a kid, its like a pop tart...at least thats what we 'pretended' they were....if this thing is as thin as it seems - that is.

That looks and sounds like the perfect comfort food for a cool Fall day.

I like reading about your "leftover" creations. It amazes me how you put together these delicious dishes with ingredients hanging around the house. Usually I open the fridge...notice that I'm out of chicken and decide I can't make a thing without it so it's take-out again! I have no imagination when it comes to making something from nothing in the kitchen. I admire the fact that you do.
DogB- Kind of a "blondie" but so much butter, it got darker...
Mona- Pineapple short cake sounds really good to me right now!
b.e.g.- My wife really likes stuff like this..
Ake- The cheese and spices made it flavorful- and filling!
Marmy- When no one knows what sound good for a quick traet- we make brownies!
romi- At least two nights a week- if I don't have something I can make in 15 minutes- we eat somebody elses!
oooh! Look at you all making chili mac too! I've never had it baked, though, I just make it on the stove and then pile the chili and cheese and onions on top...mmmm. I bet yours is great!
Today we are just going to whip up some lazy chocolate chip cookies.

VodkaM- This is my first week off, and so far somebody wants to hire me to write a resume for them, another wanted me to consult on an ad campaign, another wanted to have me go into beef jerky production, etc.! I'm trying to veg out for a few weeks, at least!

If you notice in pictures where cheese is used on my blog, it's too perfectly shredded, dead give away that I use package cheese. I spent way to many years grating that damn stuff in the restaurants! I am semi-retired, HA
